Ice was harvested from lakes and ponds in the winter and stored in heavily insulated buildings for the summer. I don't think rock salt played any part in preserving the ice. You don't have to keep it below freezing. True, some of the ice did melt but not enough to be any great loss. In low areas near the equator ice was shipped in from high mountains or regions closer to the poles. Ice was very scarce and very expensive in such areas and probably was not available during certain times of the year. When you have ice in water the whole thing comes to an equilibrium temperature of 0 degrees C. When salt is dissolved in the water the equilibrium temperature starts to drop because salt water freezes at a lower temperature than plain water. The more salt you add the lower the temperature up to the point where no more salt can dissolve. That is called saturation and such a mixture is often known as brine. If you get everything just right the temperature can be gotten down to 0 degrees F which is how mister Fahrenheit set the zero point on his scale.
