Paul, I checked EDI Academy's website and their Course: EDI Fundamentals and Best Practices - General is what you already know. I don't see anything about mapping training (if someone else does, please correct me). Perhaps they need another instructor?
As for 1EDIsource, you should ask, but I'm thinking their mapping classes are using their translation tool, which may or may not be helpful. I have not heard of this product, but I've done most of my work in the automotive industry, perhaps it's more prevalent in other industries. $1200 seems like a lot (especially if you're not working) if you're not certain it will be helpful.
