I agree with Leah. Paul's current skills cannot be 'taught'...mapping skills
can be through training off site, on-the-job training, or something like that.
A good hiring manager will recognize the difference and appreciate it.

This person does seem to understand the business and the process, he just
doesn't have the mapping skills.
Paul,
You need to present yourself differently, you have, as MCM has said, the most
difficult to acquire and important skills. You need to convince the hiring
manager of this. I have used 8 translators now and while each has its' pluses
and minuses, they all do the same thing. I've been to only one training class
(out of 8 products) and it was pretty much useless. You do need some
understanding of how the EDI and flat file structures "loop" and what the
tool
you're using can do, but from there, it's relatively straightforward (or
should
be).
Most of the big houses will only provide training to employees of the
companies
that have purchased their products, I tried once to get into Sterling's
training
but they turned me down, even though I was willing to spend the 3K they
wanted
at the time. Hey, now there's a niche waiting for someone, "unofficial"
training on name packages.

While the terminology may vary from product to product, the functions
performed do not.
Everything boils down to translating the partners' mutual requirements:
- What information do I need to enter my partner's purchase order?
- What information does my partner need to process my invoice?
The technical or user interface details of translation and mapping products
are actually tiny compared to what it takes to master the finer points of
the underlying business transactions - and the ability to communicate with
your partners regarding them.
You might 'master' a translation/mapping tool in weeks but you can't master
a business or industry quite so quickly.
Understand your client/employers business, you'll get the time to master the
tools. But if you don't understand the business and/or cannot communicate
with your partners and the 'business people' at your end - you may as well
eschew "EDI Mapping" as a profession.
