Hi Chris-
When I select Print a popup comes that simply gives a choice to print
regular or Save as PDF file and if you select Save as PDF it opens up a
window of locations for you to choice your save folder.
There is nothing in the Print window giving a choice of Adobe versions.

When you tell it to print to PDF, there should be a popup to get to
different PDF options. One of them will be for the compatibility
version. Set that to Version 3 (should be the lowest version number it
lets you set it to)
