I had that problem at my last place. When I moved the priority was a
huge barn. The house was just an afterthought :-)

Right on! You build your shop first and bring your primary power into
the shop; then sub panel to the house.
The only time one needs a lot of house in when the kids are teeners.
Later you need good storage, less house and maybe less acreage.
