This is what I've read from Canon's literature also. I remeber it to be
something like: if there is very bright light from one of the sensors
(this was at the time of EOS 50e... so maybe it's now: one or a couple of
sensors...) it is completely ignored in calculating the exposure. 
I've meant to test this many times in from of a mirror 8-)
