Moving the mail itself should go somewhere between 500MB and 1.5GB /hour in a "normal" scenario. That's about our experience over several migrations.
For a really simple environment, it's usually 1 day for doing forestprep, ADC and all the ntdsnomatch cleanup. Give things overnight to settle, then a half day to get Exchange in place and fully configured/patched/etc. Get full backups of the 5.5 environment and then start moving users. Estimate 1gb/hr and then double it for safety's sake.
