No. You can define multiple channels to play the same instrument sound.
Ideally, it would be best if all channels could be Acoustic Grand Piano with
different dynamics/voicings for the various contrapuntal lines on each staff.

Yes. But it might have been easier in the future if you plan before
this before entering music.
