Yes. You have to define different "instruments" in the Instrument List -- you can call them Piano 1, Piano 2, etc. Each instrument should be assigned to a different MIDI channel, but they should all use the same General MIDI path number of 1 (Acoustic Grand Piano). Then you assign a separate instrument to each staff or layer that you want different dynamic capabilities for.
