That ultimately gets me to the same place as Data | Add New Data Source
from the main menu. And Firebird is not listed as one of the connection
options, so I can't use that to create a typed dataset based on a
Firebird query!
Not for me. Adding new dataset file (*.xsd) creates for me empty
dataset and open dataset designer, look at [1].
You're doing probably something wrong, 'cause dataset isn't bound to
any provider at all.

I get to that point. Then, unless I am completely out to lunch, I need
to right click the designer surface to add items. I right click and
select Add | Query. (My only choices are Query, Data Table and Table
Adapter). Which gets me to the TableAdapter Query Configuration
Wizard. Where I need to select a connection. So I click New Connection
because the one that appears by default is not the one that I want.
Which eventually gets me to the point where I have to select a provider
and Firebird is not listed.
