Ok, turn off the Dock magnification and size it down to remove most of the disneyishness. You can also set it to auto-hide, which I do, gets it out of the way all the time. (I know of only one person who actually like and uses the dock magnification feature)

Seriously.

That isn't a concern with OS X like it is with OS 9. One of the most liberating things about OS X is that you don't, in the main, have to worry about micromanaging memory usage like you did in OS 9.

My work system (a Sawtooth G4 upgraded to 800Mhz, 1G memory) runs about the same when I have 15-20 programs open as when I have 3. Moreover, if one program misbehaves, I kill it; the rest of the system is unaffected, entirely. My work system is pretty much only rebooted when system updates require, meaning it's uptime is routinely measured in weeks. (it's also my web server, so it's left on all the time.)

Moreover, (and counterintuitively) this is the best way to work with a system that uses Unix. Fire up a program once and forget it. If it's not used, it's memory is swapped off to disk and doesn't really affect the functioning of the OS.

Once you've become accustomed to OS X you'll realize just how much time you spent on the quirks of OS 9, just to keep the system up and running.
