Hallo All, Don't know if this could assist, but thought I would put it out there. Some many years ago, I was also attempting to photograph and stitch a difficult subject. Unfortunately I can't remember the detail, but what I do remember is that the subject was such that it was difficult to place control points.
What I ended up doing was to place physical markers on the object, which could then be used as control points and remove using masks. This could perhaps be used in your case as well to control for distortions?
