I think the majority (as do I) prefer that the new info appear in the visible part of the message window, without scrolling. It's the result, not the method, that's preferred. Either top posting or a properly trimmed quote (i.e. just a line or two, as I've done here) will serve this purpose.
Helpful note for Mail: If you highlight just the line(s) you want to quote before hitting "reply," just that part will be quoted and you don't have to actively trim.
