As well as being the client for MS Exchange, MS Outlook can communicate
with SMTP and POP servers. SMTP to send mail, POP to retrieve it. This
is accomplished in Outlook by using the "Internet Mail Service" (at
least that was what it was called the last time I used it).
Plenty of people use Outlook to retrieve their email from their ISPs -
ISPs generally use SMTP and POP.
In other words, it should be no problem to replace MS Exchange with an
SMTP server and POP server setup. The Outlook clients will need to
change their configuration, but the Outlook software will still work. No
problem that is except for the loss of group scheduling features. You
may want to look around http://freshmeat.net for group scheduling
software - I recollect something called OCS which might serve your
purposes.
