a couple of further notes of clarification on this issue, and then i will

i wish to get rid of exchange entirely.

and finally, you might think of it this way:

1. the mapi software becomes the local delivery agent for incoming email.
2. for outgoing mail the mapi software replaces smtp for the outlook
clients
    but acts as a  proxy for them to the smtp server.
