If you use that mentality, nobody, not even Google, self hosts as they get their facilities -> connectivity -> domain -> bla bla bla from someone else.

I consider it self hosted if you run the MTA software on a system and are responsible from there up the stack.

It's self hosted if you are visible as being responsible for it (i.e. have an IP range SWIPed to you, or have a rDNS entry which points to a domain that is associated with you).

If you take cover behind anonymous hosting, anonymous domain registration, etc. you're indistinguishable from those myriads spamming organization who use exactly those anonymization services to avoid being held responsible.

There's no responsibility if you can't be held responsible.
