What I think he said was: a full crew (#1) handled the plane during landing/take-off while the other rested, then Crew #2 that was resting handled the duties during the middle part of the flight.     I think a crew consists of 3 to 5 or more members depending on the plane.

whose job is only to watch the other three and pick up any errors or
