All the 750s do that to greater or lesser extents. The culprit is the lean carb settings built in at the factory, in order to avoid more expensive emissions control devices.
There are a couple remedies. I would recommend first using Seafoam, mainly just because it couldn't hurt. I wouldn't expect dramatic improvement however. A cheap and effective way of improving throttle response is the Radio Shack washer mod illustrated and described at this link: http://www.nighthawk750.com/ (Click Modifications, then Carb Fuel Washer Mod). It requires a little minor surgery, but now that you have the bike and are noticing some of its shortcomings, might as well get your hands dirty. There are some other minor mods at that site as well.
