I like the fewest gears as possible thought. Along those lines, a Sturmey Archer AW 3 speed hub works wonderfully for me. I have a pretty big cog on the back to really take advantage of the range. They're readily available and basically indestructible (YMMV) from what I've seen. Coaster versions available as well for true simplicity.
