The difference is that using a separator character in a tag is not supported in 
most applications.  If they don't support separator characters, what you enter 
in the single tag value will be what is displayed.  eg. in iTunes, you would 
have a single artist called "Crosby;Stills;Nash".

Most tag formats allow multiple tags of the same name, so ARTIST=Crosby, 
ARTIST=Stills, ARTIST=Nash would always be read correctly.  Some apps don't 
support multiple values, so they still will not be displayed correctly, but 
there are more apps that do support multiple values when reading tags.

Never depend on tags in a metadata source database; they are always 
inconsistent.  There will always be cases where someone has entered incorrect 
data, or in an inconsistent format.

Esp. where users can upload their tags to the master database.

Yes - "\\" separators in the Quick Tags data entry panel is just a shortcut for 
entering multiple artist tags.
