Insurance companies' intended customers are salvage yards / used parts dealers.
Seems the reasonable thing to do with most of the burn cars would be to have
them hauled to a scrap metal dealer instead of the salvage auction. I can't
imagine selling a single part off a car that literally burned

Why is it worth anyone's time to photograph and enter a listing for a
vehicle like that which is clearly beyond economical repair?
Why are these not just sold for the scrap metal value?

CoPart fees are massive, on the buyer and the seller.
Worse than the wholesale dealer auctions for clean title cars.

When a car says value 52k, repair cost 47k, it's means it's a 52k car with 47k
of damage.
IAAI is better about publishing the repair cost than CoPart is.

M189 (W109 1965-67) and the M198 (gullwing) share several parts and
designs. I can confirm, at least, the water pump is the same part, for
example. I never bothered to compare much else in the EPC. but if you
examine both closely you can see many shared deigns.

There is no relationship between a W109 and the Gullwing other than
they used a mechanical injection pump for fuel delivery, I don't think
even the pump is the same.
The Gullwing engine wasn't used all that much, it was very expensive

Do realize that there are a lot of people out there who don't understand the
air suspension and as a result kludge it up badly.
My former W112 wouldn't stay up until I went through and adjusted all the
valves per the factory procedure. After doing so, it would stay up for three
weeks at a time
Air bags can be had for about $300 each per corner. Valves are more. But
you don't necessarily need them to be rebuilt to have a driveable car.
