Recipe Yield: 6 (1 Serving = 1/2 cup) Servings

Ingredients

 

3 eggs, separated

1 tbsp sugar

1/3 cup ground almonds

2-1/2 cup fresh blueberries

2 tsp cornstarch

1/2 cup whipping cream

1 tsp sugar substitute

1/2 cup vanilla yogurt

Directions

Beat egg yolks and sugar until light. Add almonds. Beat egg whites until stiff. 
Fold egg whites into egg yolk mixture.

Line a 13 x 9 inch baking pan with waxed paper. Pour batter into the pan. Bake 
in a 325F oven for 12 to 15 minutes.

Remove from the pan and cool. Cut into small squares.

To make blueberry sauce, puree 1/2 cup blueberries in a food processor or 
blender. Dissolve cornstarch in cream. Cook cream, remaining blueberries, and 
blueberry puree over low heat until thickened, about 5 minutes. Cool. Stir in 
sugar substitute.

To serve, line a serving dish with 1/2 of blueberry sauce; arrange cake squares 
over blueberry sauce. Top with remaining sauce. Spoon on yogurt. Serve 
immediately.

Blueberry Yogurt Muffins

1 egg

1 cup yogurt (lemon, vanilla or honey-flavored)

3 tablespoons melted margarine

2 1/2 cups biscuit baking mix

1 cup blueberries

In medium bowl, lightly beat egg; gently blend in yogurt and margarine. Add
baking mix; stir just until well moistened. Stir in blueberries. Fill 12
greased or paper-lined muffin cups two-thirds full. Bake in preheated 400
degree oven for 15 minutes, or until lightly browned. Immediately remove
from pan. Serve hot.

Makes 12 muffins.  Mama's Corner.

Makes eight servings.  

 

ready in: 30-60 minutes.

 

ingredients

1 1/3 cup flour
3/4 cup quick-cooking oats
1/3 cup sugar
2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup milk
1/4 cup vegetable oil
1 egg, beaten
1 cup frozen blueberries

directions

Preheat oven to 400 degrees F. Grease an 8-inch round baking pan and set
aside. 

In a medium mixing bowl, combine flour, oats, sugar, baking powder and salt.


In a 1-cup measure stir milk, oil and egg. Pour all at once into flour
mixture. Stir just until moistened (batter will be lumpy). Fold in
blueberries. 

Spoon batter into prepared pan. Bake until cake is golden and pulls away
from sides of pan, 20 to 25 minutes. Cool on a rack, 5 to 10 minutes. Serve
warm.  Enjoy.

The fruit pizza recipe I like best has some sort of fruit dressing for the

blessing.

Blueberry Dessert Pizza With Cake Mix Crust Recipe from CDKitchen

 

Makes twelve servings.  

 

ready in:  1-2 hrs.

 

ingredients

1 package white cake mix
1 1/4 cup quick-cooking rolled oats
1/2 cup margarine, softened
1 egg
1/2 cup nuts, chopped
1/4 cup brown sugar, packed
1/2 teaspoon cinnamon
21 ounces blueberry pie filling

directions

Heat oven to 350 degrees F. Grease 12" pizza pan or 13x9" pan. 

In large bowl, combine cake mix, 1 cup oats and 6 tablespoons margarine at
low speed until crumbly. Reserve 1 cup crumbs for topping. To remaining
crumbs blend in egg. Press in prepared pan. 

Bake at 350 degrees F for 12 minutes. 

In same large bowl, add remaining 1/4 cup oats, 2 tablespoons margarine,
nuts, sugar and cinnamon, to reserved crumbs; mix well. Remove base from
oven and spread pie filling evenly over top. 

Sprinkle with reserved crumb mixture. Return to oven and bake 15-20 minutes
or until crumbs are light golden brown. Cool completely. Cut in wedges or
squares. Enjoy.

Blueberry BBQ Sauce

 Ingredients

4 cups fresh blueberries (can sub frozen thawed blueberries)
2 cups chicken stock (can sub vegetable stock)
1/2 cup ketchup
1 lemon, juiced
1/2 cup brown sugar
1/4 cup balsamic vinegar
2 tablespoons blackberry preserves
2 tablespoons soy sauce
2 teaspoons kosher salt
2 cloves of garlic, grated or finely minced
1 inch piece of ginger, grated
1/2 teaspoon cayenne pepper

 Instructions

Add blueberries and chicken stock to a medium pot over high heat and bring
to a simmer. Cook until blueberries start to break down, about 6-7 minutes.
Mash blueberries well in the pan. Then let the blueberry mixture cool a bit
and add to a blender. Blend well. Press blueberries through a mesh
strainer. Add sauce back to pot and bring back to a simmer over medium
heat. Add other ingredients to the pot and continue to simmer for 30
minutes, or until sauce is thick and coats the back of a spoon. Taste and
season BBQ sauce with salt as needed. Allow sauce to cool. Store in an air
tight container in the refrigerator. Yield: makes 3 to 4 cups of sauce

Blueberry Scones

2 cups sifted flour
3 teaspoons baking powder
1 teaspoon  salt
2 tablespoons sugar
1/3 cup butter
1/3 cup buttermilk
1 egg
1 cup fresh or frozen blueberries

Directions

Sift together dry ingredients and cut in butter with 2 knives or pastry 
blender. Add buttermilk to egg reserving 1 tablespoon unbeaten egg white. 
Beat until blended. Pour into dry ingredients all at once, stirring quickly. 
Lightly 
fold in blueberries. Turn out onto a lightly floured surface. Pat to 
1/2 inch thickness. Cut into squares, triangles or diamonds with a floured 
knife. 
Brush with egg white diluted with 1 teaspoon water. Sprinkle with granulated 
sugar.
Bake on an ungreased cookie sheet at 425° for 10 to 15 minutes. 
Makes 15 to 20 medium scones.

Place blueberries and lemon juice in an 8 by 8 inch pan.  Mix flour, baking
powder, salt, nutmeg, and 3/4 cup sugar.  Beat in milk, egg, melted butter,
and vanilla.  Spread over berries.  Mix 1 cup sugar with cornstarch and
sprinkle over batter.  Pour boiling water over all.  Bake at 350 for 40 -
50 minutes.

This is a delicious cake for breakfast or brunch, or serve it as a dessert 
with vanilla or lemon sauce.

Cook Time: 50 minutes
Total Time: 50 minutes
Ingredients:

. 3 cups all-purpose flour
. 3 teaspoons baking powder
. 1 teaspoon baking soda
. 1 teaspoon salt
. 12 tablespoons butter, softened
. 1 2/3 cup sugar
. 4 large eggs
. 2 teaspoons vanilla
. 8 ounces sour cream
. 2 cups blueberries, rinsed, picked over, stems removed

Preparation:
Heat oven to 350°. Grease and flour a Bundt cake pan (10-12 cup size).

In a bowl, combine the flour, baking powder, soda, and salt. Set aside.

In a large mixing bowl with electric mixer, cream butter and sugar until 
light and fluffy. Beat in eggs, one at a time, beating well after each 
addition.
Beat in the vanilla.

Slowly beat in the flour mixture, alternating with the sour cream. Blend 
well. Fold in the blueberries. Bake for 50 to 60 minutes, or until a cake 
tester
or wooden pick comes out clean when inserted into the center of the cake.

*-BLUEBERRY BREAD PUDDING
3 c. milk
3 large eggs
5 to 6 c. day-old torn French or Italian bread or rolls
1 c. granulated sugar
1/4 tsp almond extract
1/2 tsp vanilla extract
1/2 tsp lemon zest, optional
2 c. fresh blueberries
3 tbsp powdered sugar

Heat oven to dg350. Butter an 11x7-inch baking dish.
Whisk together milk, eggs, sugar, flavorings and zest. Add bread and
let stand for 10 to 15 minutes. Toss blueberries with powdered sugar,

then stir into bread mixture.
Pour into prepared baking dish. Set baking dish in a larger pan and set

in oven. Add about 4 cups of very hot water to the outer pan.
Bake for about 1 hour, or until the bread pudding is set and lightly

browned on top.
Serves 8 to 10.

1 loaf Texas toast or egg bread, cut into cubes
8 ounces cream cheese, slightly softened
1 1/2 cups fresh blueberries, tossed lightly with flour
Cinnamon
8 large eggs
1 1/2 cups milk
3/4 cup maple syrup
6 tablespoons butter, melted

Coat a 13 x 9 x 2-inch baking dish with nonstick cooking spray. Layer one  half 
of bread cubes in baking dish. Cut cream cheese into cubes and scatter  over
bread. Layer blueberries over cream cheese. Cover blueberries with remaining  
bread. Sprinkle generously with cinnamon.

Mix remaining ingredients and pour over bread; press bread with spatula to  
help soak up mixture. Cover and refrigerate overnight.

Bake at 350 degrees F for 45 to 50 minutes.

Serves 8.

Ingredients

. 1/3 cup sugar
. 1/4 cup butter or margarine, softened
. 1 egg, beaten

. 4 teaspoons baking powder

. 1 cup milk
. 1 teaspoon vanilla extract
. 1 1/2 cups fresh or frozen blueberries

STREUSEL:
. 1/2 cup sugar
. 1/3 cup all-purpose flour
. 1/2 teaspoon ground cinnamon
. 1/4 cup butter or margarine

Directions

In a mixing bowl, cream sugar and butter. Add egg; mix well.
Combine flour, baking powder and salt; add to the creamed mixture alternately 
with milk. Stir in vanilla. Fold in blueberries.
Fill 12 greased or paper-lined muffin cups two-thirds full.
In a small bowl, combine sugar, flour and cinnamon; cut in butter until 
crumbly.  Sprinkle over muffins.
Bake at 375 degrees F for 25-30 minutes or until browned.

Blueberry Jell-O Salad

Ingredients:

1 large box or 2 small boxes raspberry Jell-O

1 cup boiling water

1 cup cold water

1 20- or 21-ounce can blueberry pie filling, undrained

1 20-ounce can crushed pineapple, undrained

  Method: Dissolve Jell-O in hot water. Then add the cold water. Add

pineapple and blueberry pie filling to mixture. Pour into a mold or

attractive bowl and chill to set. Make the Jell-O as instructed above and

not as directed on the box.

Topping Ingredients:

1 8-ounce package cream cheese

1/2 cup sugar

1 teaspoon vanilla extract

1 small container Cool Whip

Chopped nuts, optional

  Method: Combine and beat cream cheese, sugar, and vanilla extract

till smooth and spread over firm Jell-O. Spread evenly with Cool Whip

Salad BLUEBERRY SALAD

1 can blueberries, drain and reserve juice

1 can crushed pineapple

   1 box black cherry Jell-O®

1 cup boiling water

 

Add boiling water to Jell-O.  Combine juice from berries (add enough water to 
make ½ cup).  Add berries and pineapple.  Chill

Topping:

8 oz. sour cream  8 oz. cream cheese

½ cup sugar  1 cup chopped nuts

Soften cream cheese.  Add sugar, sour cream and nuts. Put this mixture on top 
of the jelled salad.

Blueberry Snack Bars

 

1 (18.25 ounce) yellow cake mix 

1/2 cup butter or margarine, melted 

8 ounces cream cheese

3 eggs 

2 1/2 cups confectioners' sugar 

1 (21 ounce) can blueberry pie filling 

3/4 cup coconut 

3/4 cup chopped walnuts

 

Heat oven to 325 degrees F.

 

In a large bowl combine cake mix, butter and 1 egg; blend well. Pat mixture 
into bottom of a well greased 15 x 10-inch jellyroll pan.

 

In a mixing bowl, beat cream cheese until fluffy. Beat in 2 eggs and 
confectioners sugar. Pour over cake mixture in pan. Spread blueberry pie 
filling on

top and sprinkle with coconut and nuts.

 

Bake for 45 minutes or until lightly browned. Cool and cut into bars.  Enjoy.

Here is a variation of the previous Great Grandma Bohanan's Apple Crisp recipe.
It is just as easy and just as good!!
5 or 6 Jonathan or Granny Smith apples peeled, cored and sliced
1 box Blueberry muffin mix with real blueberries
1 stick butter, soften

Preheat oven to 325 degrees F.
Drain berries and save  the juice.
Combine the berries with the sliced apples  and spread evenly in a baking pan.
In a medium bowl, cut together butter and the dry mix for the muffins 
until mixture resembles fine crumbs.

Sprinkle on top of apples.
Add the saved juice by pouring over the top of the crumb mixture, as 
evenly as you can...

Bake for 40 minutes or until topping turns golden brown.

1-3/4 cups all-purpose flour

1/4 cup quick-cooking oats

2 tablespoons oat bran

1/2 cup granulated sugar

2 teaspoons baking powder

1/2 teaspoon salt

2 tablespoons vegetable oil

1 egg

1-1/2 cups mashed bananas

3/4 cup frozen blueberries

 

DIRECTIONS

 

1. Preheat oven to 350 degrees. 

2. Lightly grease a 9x5-inch loaf pan.

3. In a large bowl, stir together flour, oats, oat bran,

sugar, baking powder and salt.

4. In a separate bowl, using an electric mixer, beat oil,

egg and banana until combined. 

5. Pour mixture over dry ingredients and stir just until combined. 

6. Gently fold in frozen blueberries. 

7. Spoon into prepared pan.

8. Bake in preheated oven for 70 to 80 minutes or until

a cake tester inserted in the center comes out clean.

9. Let cool in pan on rack for 10 minutes. 

10. Remove from pan and serve warm.

2 tablespoons butter

1/4 cup boiling water

1 tablespoon finely grated orange peel

1/2 cup orange juice

1 egg

1/4 teaspoon baking soda

1/2 teaspoon salt

1 cup fresh or frozen (thawed) blueberries



Topping:

 

1 teaspoon finely grated orange peel

2 tablespoons orange juice

2 tablespoons honey

 

Preparation:

 

1. Combine butter and boiling water in a small bowl; add 1 tablespoon grated 
orange peel and 1/2 cup orange juice.

2. In a mixing bowl, beat egg and granulated sugar with an electric hand-held 
mixer until light and fluffy. 

3. In a separate bowl, combine the flour, baking powder, soda, and salt; add to 
egg mixture a little at a time, alternating with orange juice mixture, ending 
with flour mixture.

4. Fold in blueberries. 

5. Spoon batter into a greased and floured 9x5x3-inch loaf pan. 

6. Bake at 350 degrees for 50 to 55 minutes, or until a wooden pick or cake 
tester inserted in center comes out clean. 

7. Cool bread in pan 10 minutes; remove to wire rack.

8. Combine 1 teaspoon orange rind, 2 tablespoons orange juice, and 2 
tablespoons 

honey, mixing well. 

9. Spoon over hot bread; let cool.

Crumb topping - recipe follows

Method

 

1. Heat oven to 375 degrees. 

2. Grease 9-inch round pan or 9-inch square pan.

3. Mix flour, sugar, shortening, milk, baking powder, salt and egg in large 
bowl. 

4. Beat 30 seconds with spoon. 

5. Carefully stir in blueberries.

6. Spread batter in pan. 

7. Sprinkle with crumb topping. 

8. Bake 45 to 50 minutes or until wooden pick inserted in center comes out 
clean. 

9. Drizzle with Glaze and serve warm. 

10. Makes 8 servings.

 

Crumb Topping:

 

1/2 cup granulated sugar

1/3 cup all purpose flour

1 cup boiling water

 

Method

 

Combine blueberries, lemon juice and lemon peel in a greased 8-inch square 
baking dish; set aside. Combine next 8 ingredients (flour through nutmeg) in

a bowl. Whisk together milk, egg, melted butter and vanilla until blended. Add 
milk mixture to flour mixture and stir just until combined. Spoon batter

over blueberry mixture, spreading evenly. Combine 1/2 cup sugar and cornstarch, 
sprinkle over batter. Gradually pour boiling water over top, covering evenly.

Bake at 350° for 40 to 45 minutes or until a cake tester inserted in center of 
cake layer comes out clean. Serve warm

Light brown sugar

Ingredients:

  b.. 2 teaspoons baking soda
  c.. 1 cup granulated sugar
  d.. 1/2 teaspoon salt
  e.. 1/2 teaspoon ground cinnamon
  f.. 1/4 teaspoon ground allspice
  g.. 1/4 teaspoon ground nutmeg
  h.. 1 large egg
  i.. 3/4 cup milk
  j.. 5 tablespoons melted butter
  k.. 1 cup fresh blueberries or thawed and well drained frozen blueberries
  l.. confectioners' sugar for dusting, optional
Preparation:
Heat oven to 350°. Grease and flour an 11 x 7-inch baking pan. 
In a mixing bowl, combine the flour, baking soda, sugar, salt, allspice, 
nutmeg, and cloves.

In another bowl, whisk together the egg, milk, and melted butter. Stir the milk 
mixture into the dry ingredients just until moistened. Gently fold in the 
blueberries.

Spread in the prepared baking dish and bake for 25 to 30 minutes, or until the 
bars are lightly browned and a toothpick comes out clean when inserted in the 
center.

Ingredients:

  d.. 4 tablespoons chopped peanuts or pecans, optional
Preparation:
In a small bowl, combine blueberries and preserves. In microwave, cook on HIGH 
for about 3 to 4 minutes, stirring twice, until blueberries are softened. Cover 
and refrigerate until ready to assemble. To serve, in each of 4 dessert or 
parfait glasses layer ice cream or frozen yogurt and blueberry sauce. Garnish 
with nuts.

Place blueberries and lemon juice in an 8 by 8 inch pan.  Mix flour, baking

and vanilla.  Spread over berries.  Mix 1 cup sugar with cornstarch and
sprinkle over batter.  Pour boiling water over all.  Bake at 350 for 40 -
50 minutes.

BLUEBERRY CHEESECAKE IN A GLASS 

 

2 (8 oz.) pkgs. cream cheese, softened

1/3 c. sifted confectioners' sugar

1 1/3 c. sour cream

2/3 c. heavy cream or 1 1/2 c. frozen whip topping, thawed

Vanilla wafers (optional)

7 c. blueberries (about 3 1/2 pts.)

1 tbsp. orange flavored liqueur (optional)

 

In large bowl, mix together cream cheese, confectioners' sugar, and sour cream 
until smooth. Whip the heavy cream (or use the other) and fold it into the

cream cheese mixture. Put a vanilla wafer in the bottom of each of 10 glasses. 
Toss the blueberries in the liqueur (if desired).

 

Fill the glasses about 2/3 full with berries. Add 3 tablespoons of the cream 
cheese mixture to each glass and lightly shake it down so it oozes over the

berries. Add another tablespoon of berries to each glass, another tablespoon of 
cream cheese mixture, and top with a few berries.

 

Serve immediately or refrigerate for 1 hour or so.  Enjoy.  Marilyn.

In a medium skillet, melt 1 Tbsp butter over medium heat; place half of the 
wraps seam side down in skillet and cook, turning occasionally until evenly 
browned, about 3 minutes. Repeat with remaining butter and wraps.

Serve topped with blueberry sauce

   Blueberry Orange Bread

Recipe for blueberry orange bread, with blueberries, orange peel and orange
juice.

Cook Time: 55 minutes
Total Time: 55 minutes
Ingredients:

. 2 tablespoons butter
. 1/4 cup boiling water
. 1 tablespoon finely grated orange peel
. 1/2 cup orange juice
. 1 egg
. 1 cup granulated sugar
. 2 cups all-purpose flour
. 1 teaspoon baking powder
. 1/4 teaspoon baking soda
. 1/2 teaspoon salt
. 1 cup fresh or frozen (thawed) blueberries
. .
. Topping:
. 1 teaspoon finely grated orange peel
. 2 tablespoons orange juice
. 2 tablespoons honey

Preparation:
Combine butter and boiling water in a small bowl; add 1 tablespoon grated
orange peel and 1/2 cup orange juice.

In a mixing bowl, beat egg and granulated sugar with an electric hand-held
mixer until light and fluffy. In a separate bowl, combine the flour, baking
powder,
soda, and salt; add to egg mixture a little at a time, alternating with
orange juice mixture, ending with flour mixture.

Fold in blueberries. Spoon batter into a greased and floured 9x5x3-inch loaf
pan. Bake at 350° for 50 to 55 minutes, or until a wooden pick or cake
tester
inserted in center comes out clean.. Cool bread in pan 10 minutes; remove to
wire rack.

Combine 1 teaspoon orange rind, 2 tablespoons orange juice, and 2
tablespoons honey, mixing well. Spoon over hot bread; let cool.

Blueberry Cheesecake Bread

1 (16.5 to 18.25 ounce) box blueberry muffin mix

Filling:

1 (8 ounce) package cream cheese, softened

1/2 teaspoon almond extract

1/4 cup granulated sugar

1 teaspoon lemon

juice

1 egg

Streusel Topping:

1/4 cup butter, melted

1/4 cup flour

1/4 cup granulated sugar

1/4 cup chopped nuts

1 teaspoon cinnamon

Heat oven to 375 degrees F. Grease a 9 x 5-inch loaf pan.

Prepare muffin mix as directed on package, including adding the blueberries. 
Pour

half of the batter into prepared pan.

Filling: In a separate mixing bowl, beat together cream cheese, almond extract, 
sugar,

lemon juice and

egg

 until smooth. Spread the cream cheese filling over the layer of muffin batter 
in

the pan. Pour the remaining batter on top of the filling.

Streusel Topping: Stir together melted butter, flour, sugar, chopped nuts and 
cinnamon.

Sprinkle streusel topping over the top of the batter.

Bake for 35 to 45 minutes or until a wooden pick inserted into middle comes out 
clean.

Cool, then refrigerate before serving.  Enjoy.

Blueberry Streusel Cornbread

2 boxes Jiffy cornbread mix

2 eggs

2/3 cup milk

2

tablespoons

 flour

2 cups fresh blueberries

Streusel Topping:

3 tablespoons butter, softened

3/4 cup sugar

1/2

cup flour

3/4 teaspoon cinnamon

Heat oven to 350 degrees F. Grease a 9-inch square pan.

Mix muffin mix, eggs, milk and flour for 30-60 seconds using electric mixer. 
Fold

in blueberries. Pour into prepared baking pan.

In mixing bowl, using a pastry blender, combine topping ingredients into fine 
crumbs.

Spoon over cornbread mixture.

Bake at for 45-50 minutes. Serve warm.  Enjoy.

Sorry about that. I guess they mean extra flour for mixing with the berries, 
so they won't sink to the bottom of the batter or so they don't stick 
together.

And, it calls for 2 more tablespoons of flour for the streusel topping.
You'll see in the method, to use one tablespoon  to mix with the 
blueberries.

Blueberry Pecan Squares

1/2 cup brown sugar

1/2 cup granulated sugar

2 eggs

3/4 cup corn oil

1 cup all-purpose flour

1 teaspoon baking soda

1 teaspoon cinnamon

1/2 teaspoon salt

1 cup grated zucchini

1 1/2 cups fresh blueberries

3/4 cup coarsely chopped pecans

1/4 cup powdered sugar, sifted

Beat together the brown sugar, granulated sugar, eggs and corn oil. Sift dry 
ingredients. Add to sugar and egg mixture. Stir in zucchini, blueberries and 
pecans. Pour batter into a greased 13 by 9 inch baking pan. Bake at 350 
degrees for 20 to 25 minutes, or until a cake tester inserted in center 
comes out clean. Cool completely on a wire rack. Cut into squares. Dust with 
powdered sugar. Serve with vanilla ice cream, if desired.


Microwave Directions:

Beat together the brown sugar, granulated sugar, eggs and corn oil. Sift dry 
ingredients. Add to sugar and egg mixture. Stir in zucchini, blueberries and 
pecans. Pour batter into a greased 13 by 9 inch microsafe baking dish. 
Microwave on high for 8 to 12 minutes, or until done. Let stand to 
completely cool before cutting into bars. Dust with powdered sugar. Serve 
with vanilla ice cream, if desired.


Makes 20 to 24 squares.

Blueberry Sausage Breakfast Casserole
3/4 pound pork sausage
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup butter
1/2 cup granulated sugar
1/4 cup brown sugar
2 eggs
8 ounces sour cream
1 cup fresh blueberries
1/2 cup pecans, chopped
The day before serving, cook sausage and drain well.
Stir together flour, baking powder and baking soda.
In large mixing bowl, beat butter until fluffy. Add sugars and beat until 
well-blended.
Add eggs, one at a time, beating well after each addition. Alternate adding 
flour
mixture and sour cream to creamed ingredients; mix well. Fold in sausage and 
berries.
Pour batter into ungreased 13 x 9-inch baking pan. Sprinkle pecans on top. 
Refrigerate
overnight.
Heat oven to 350 degrees F. Bake for
35 to 40 minutes, until done. Cool on wire rack.  Enjoy.

Blueberry Monkey Bread

2/3 cup white sugar

1 tablespoon ground cinnamon

4 (10 ounce) cans refrigerated buttermilk biscuit dough

1 1/4 cups frozen blueberries, dry pack

2/3 cup white sugar

10 tablespoons margarine

1 teaspoon vanilla extract

1 tablespoon ground cinnamon

1 cup frozen blueberries, dry pack

Preheat oven to 350 degrees F (175 degrees C). Thoroughly grease a 10 x 4 inch 
tube

pan.

Mix sugar and cinnamon. Cut biscuits in quarters, then roll each piece in 
sugar-cinnamon

mixture. Arrange about 1/4 of the biscuit pieces and blueberries in an even 
layer

in pan.

Place blueberries between biscuit pieces, creating a mosaic effect. Repeat three

times with remaining biscuits and blueberries, covering blueberries of one layer

with biscuits in next layer to avoid a column of blueberries.

In saucepan combine sugar, margarine, vanilla, cinnamon, and the additional cup 
of

blueberries. Bring to a boil, then reduce heat. Cook, stirring frequently until 
sugar

is dissolved and margarine is melted. Pour over biscuits in pan.

Bake for 65 minutes or until done. Lift or turn out onto a cake plate.   Enjoy.

BLUEBERRY-LIME POUND CAKE 

Cake:

8 ounces (1 cup) unsalted butter, softened; more for pan

10 1/2 ounces (2 1/3 cups) all-purpose flour; more for pan

1 1/2 teaspoons baking powder

1/4 teaspoon plus 1/8 teaspoon salt

1 3/4 cups granulated sugar

2 teaspoons finely grated lime zest

6 ounces cream cheese, softened

4 large eggs plus 1 large egg yolk, at room temperature

2 1/2 cups room-temperature blueberries (about 13 ounces), washed and drained on

paper towels

Glaze:

4 ounces (1 cup) confectioners' sugar

2 tablespoons fresh lime juice; more as needed

To prepare oven, bundt pan: Position rack in center of oven. Preheat oven to 350

degrees. Butter and flour 12-cup bundt pan.

To make batter: Sift flour, baking powder and salt into medium bowl. Put sugar 
and

lime zest in food processor. Pulse 20 times or until zest is in small

pieces. (Note: If you don't have food processor, omit this step and blend zest 
into

flour.) With stand mixer fitted with paddle attachment or hand mixer,

beat butter and cream cheese in large bowl on medium speed for 1 minute or until

smooth. Add sugar mixture. Beat on medium for 1 to 2 minutes or until

light and fluffy. With mixer still running, add whole eggs, 1 at a time, mixing 
well

after each addition and stopping mixer to scrape bowl twice. Beat

in egg yolk. Reduce mixer speed to low. Slowly add flour mixture. Stop mixer to 
scrape

bowl. Beat at medium speed for 20 seconds or until batter is smooth

and light. Using rubber spatula, gently fold blueberries into batter.

To bake cake: Transfer batter to prepared pan, spreading it evenly with spatula.

Run knife through batter or tap pan lightly against counter to eliminate

any air pockets. Bake for 50 to 55 minutes or until wood skewer inserted in 
center

comes out clean. Set pan on wire rack to cool for 10 minutes. Invert

onto rack. Remove pan. Cool completely.

To glaze cake: In spouted measuring cup or bowl, whisk confectioners' sugar and 
lime

juice together until smooth. (Note: Glaze should be thin enough to

pour. If not, add more lime juice, 1 teaspoon at a time.) Put baking sheet under

rack to catch drips. Drizzle glaze over top and sides of cake. Let glaze

set fully before transferring cake to cake plate and serving.

Blueberry Hummingbird Bars

3 cups flour
2 cups granulated sugar
1 teaspoon baking soda
1 teaspoon cinnamon
1 cup vegetable oil
1/2 teaspoon salt
2 teaspoons vanilla extract
2 cups diced bananas
1 cup chopped nuts
1 cup blueberries
3 eggs, slightly beaten
1 (8 ounce) can crushed pineapple, undrained

Heat oven to 350 degrees F. Grease and flour 15 x 10-inch jellyroll
pan.

Lightly spoon flour into measuring cup, level off. In large bowl,
combine all ingredients. Stir until blended, spread evenly in pan.
Bake 30 to 40 minutes until toothpick inserted in center comes out
clean.

Glaze: In small bowl, combine 1/4 cup softened butter or margarine, 1
1/2 cup powdered sugar and 1 to 2 tablespoons warm milk. Spread over
warm bars. Cool completely, cut into bars. Store in refrigerator.

   Makes 48 bars.

Blueberry Cream Coffee Cake

 

1 box white cake mix

1/2 cup fine chopped nuts

1/2 cup graham cracker crumbs

1/2 cup butter, melted

1 can blueberry pie filling

1 cup sour cream

1 egg

1/4 teaspoon nutmeg

 

In large mixing bowl, combine cake mix, nuts, cracker crumbs and butter. Mix on

low speed until crumbly. Reserve 1 1/2 c. for topping. Press remaining mixture

into bottom of greased 9x13 inch pan. Spread pie filling over crust. In small

mixing bowl, combine sour cream, egg and nutmeg. Pour over pie filling and

sprinkle with reserved crumbs. Bake at 350ºF for 40-50 minutes or until topping

is golden. Serve warm or cold.

PEG´S NOTE:

I found some apple-cranberry pie filling so I tried this recipe with that 
instead of the blueberry pie fillingit was wonderful! I am sure any fruit

pie filling would work fine.
