I also have R.H. Forschner Co. Victorinox knives.
10" Slicer , 8" Chef, 6" Flexable Boning, and a set of 4 Paring Knives 
all with the Fibrox handles.

Going to treat myself to a 7" Santoku for my B-Day.
Son gave me the Chef and Boning for Christmas 2 years ago the rest I got 
at the local restaurant

supply house. Cheaper there than on the net.

I mostly use a 12" Lodge cast iron skillet for cooking also have a set 
of 3 T-Fal type skillets that I use.
RevereWare 1qt & 2qt pans, 10qt Cast Iron Dutch Oven, and a 14qt Cast 
Iron Jambalaya pot.

ans a set of assorted Magalite cookware.

I need where the rod coming thru the firewall (from the accelerator)

I opted for the rebuilt unit.  Appeared identical.  It was challenging to
RR because the alternator is right against the frame rail.  The brushes
were very worn.  I did see a source of brushes online for $26.  I hadn't
yet seen Dans email about Ace hardware.  The engine seems quieter now.  I
think the alternator may have been the source of an intermittent startup
squeal.  I don't believe the belt was loose or needing adjustment.  Glad
it's done.

I read in a review (no claim of validity) that the earlier kitchenaids were
made bu Hobart, who sold the brand to Whirlpool recently (last 10 years or
so?). I expect that quality would suffer, though our old one has a
mechanical fly weight based PWM-like speed control, and the new ones have
electronic PWM speed control. I would think that the new speed controls
would be better, and generate much less RF interference. I have to stop
operating when my wife is kneading bread with it, but it's worth the
interruption!

Yup.  And the latter is what I agitate for whenever I go to a town meeting
or "yell at your state congresscritter" type of event. People here are
mostly stuck on the idea that the only thing that will fix the economic
problems of the rural Northwest, which has been a mess for twenty-some
years, is for federal restrictions on logging to be lifted, bringing all
the old timber jobs back. Ain't gonna happen, sez I.   I don't want
Columbia County to turn into the next Silicon Forest with an Intel chip
plant around every corner, but it has potential to become a high-tech
telecommuting hub, if people would get their act together and extend the
Internet backbone that runs down the I-5 corridor out along the Columbia.
 Or we could become leaders in biodiesel production or something.  Just as
long as it's forward-looking, not backward.

Portland's suburbs are tightly constrained by a controversial draconian
anti-sprawl law enacted in the '70s called the Urban Growth Boundary--to
overgeneralize, inside the UGB is all row houses and infill development,
outside is all ranch land, federally protected forest, and wineries.
 Beyond that, Oregon's far less populous than either Washington or
California.  The greater Portland metropolitan area is the only densely
populated area in the state (although Bend in the south-central part of the
state is getting there, thanks to lots of Californian retirees).

Apparently the ones from 1965 are built to last, the modern ones not so much. 
Lots of drivetrain issues, I'm lead to understand. Mine certainly seems rather 
poorly constructed with a lot of movement of the machine body, suggesting that 
something is seriously out of round. 

I suspect Kitchen Aid has been coasting along on the reputation of those early 
mixers just like Mercedes-Benz has been coasting on the reputation of the W123, 
the last truly dependable and simple MB, IMHO.

And you should drain the oil cooler as well. There's a drain plug. Washer is an 
odd size though. 

But worth establishing that what you saw in the oil was indeed unusual. Get 
some more from a different store and compare how it looks...

Well, all good knives need to be handled carefully, but the laminated
structure of the Shun knives provides a great deal of toughness, as does the
VG10 alloy.  Also, they are not at all cheap, and I only have them because I
got them at an excellent (but still pretty expensive) price.

Water stones are a bit fiddly for me, I am able to get good sharpness from
my knives with simpler, quicker methods.

I've not tried the Asian knives other than a very cheap Santoku set for fun
and a cheap Korean carbon steel knife to see if I like that style.  I'm  not
impressed enough to do more than sharpen my Chicago Cutlery stainless stuff.
It serves me well, although they all need another trip to the waterstones
again, I didn't get them to the state I'd prefer the first time.

Knives are a pretty personal thing, you need to have the ones that fit how
and what you do with them. Asian very hard thin knives must be handled very
carefully or they chip badly, and sharpening them is definitely an art you
must learn or they are pretty much mediocre.

If you or another member of your household tends to band knives around,
stick with decent quality stainless European style knives, it will save you
a ton of grief and they will work well enough.  If you can keep the knives
out of other people's hands, you may prefer Asian style knives as they are
generally shaper and cut better with less daily maintenance (using a knife
steel).

  As I said, I'm perfectly happy with my standard Chicago Cutlery  
stuff, but it's all made in the USA, meaning it's 30 years old or so.   
New stuff is pretty much junk for the most part unless you spend a pile of
cash.

My absolute favorite knife is a K-BAR small utility knife.  Looks like a
miniature chef's knife.  Mother never used it because she could never get it
sharp on an Arkansas stone.  Once I ran it over the waterstones, it cuts
like crazy and has stayed sharp for six months now even though I use it to
take chickens apart regularly.  Wonderful knife, I need to keep looking for
more of them.  K-BAR only made kitchen knives for a few years in the late
40's and early 50's, they are well known for their military equipment.

Kitchen Aids rock!  We have two, the one my Aunt got for us in about  
1965 and the one she had of the same vintage, right after they started  
selling home kitchen stuff.  Both still run, although they both need  
some work (new gear set on the tilting one from my aunt and a new  
switch for the other one).


Probably the oldest ones around here according to the repair service  
when we had a gear set put in 30 years or so ago.


I'm not sure how I would manage without them.

I've not tried the Asian knives other than a very cheap Santoku set  
for fun and a cheap Korean carbon steel knife to see if I like that  
style.  I'm  not impressed enough to do more than sharpen my Chicago  
Cutlery stainless stuff.  It serves me well, although they all need  
another trip to the waterstones again, I didn't get them to the state  
I'd prefer the first time.


Knives are a pretty personal thing, you need to have the ones that fit  
how and what you do with them. Asian very hard thin knives must be  
handled very carefully or they chip badly, and sharpening them is  
definitely an art you must learn or they are pretty much mediocre.


If you or another member of your household tends to band knives  
around, stick with decent quality stainless European style knives, it  
will save you a ton of grief and they will work well enough.  If you  
can keep the knives out of other people's hands, you may prefer Asian  
style knives as they are generally shaper and cut better with less  
daily maintenance (using a knife steel).


 As I said, I'm perfectly happy with my standard Chicago Cutlery  
stuff, but it's all made in the USA, meaning it's 30 years old or so.   
New stuff is pretty much junk for the most part unless you spend a  
pile of cash.


My absolute favorite knife is a K-BAR small utility knife.  Looks like  
a miniature chef's knife.  Mother never used it because she could  
never get it sharp on an Arkansas stone.  Once I ran it over the  
waterstones, it cuts like crazy and has stayed sharp for six months  
now even though I use it to take chickens apart regularly.  Wonderful  
knife, I need to keep looking for more of them.  K-BAR only made  
kitchen knives for a few years in the late 40's and early 50's, they  
are well known for their military equipment.

New oil that I've used for MANY years has another aluminum foil seal stuck 
firmly to the top of the jug under the cap with the frangible collar.

FWIW:
If I were in Craigs position I would vounteer as a physics, chemistry, or
science teachers aid at a local high school; without pay if necessary.  Then
I would be sure and include that prominently on my CV in further
applications; and if the schools Craig has already applied to again need a
physicist, I would send in an updated application with the current work at
the high school prominently displayed and the application titled: "UPDATED
APPLICATION".
Correct me if I'm wrong, but I assume that Craig has had no recent
experience teaching high school students physics, and that
applicants who have are the ones who got the jobs for which Craig applied.
At a small college Craig would very likely be teaching students who are less
than one year out of high school, so the teachers aid experience could be
very valuable to him after he finds such a job.

I've had no problems with either Kumho or Yokohama tires.  The ones I had
tended to be noisy and didn't handle like X-1 Michelins, but for around $75
shipping prepaid it's not surprising.

If in doubt you could always send the remaining drops from the jug to Larry and 
have it analysed. 

Or go buy another jug from a different store. If it's not the same, that kinda 
clears it up.

The guy at Sears knows absolutely nothing about Oils!   the only oil 
that comes out Black is used Diesel Oil.   Sealed or not you got ripped 
off.   See if Shell has a local distributor/sales office where you are 
-- call them and ask them what is sears selling in THEIR bottles/Jugs?


Also ask SHELL if they sell ANY oils that starts life that is black and 
has chunks in it?


I have operated a Oil analysis business for 15+ years  - and I have 
never heard of anyone trying to pass oil that looks like you describe it 
as new oil!  I suspect SHELL will be very interested.You might tell 
them you want replacement jugs of the junk you bought from Sears...


It would be helpful if you have the seal/s that was on the bottle -- 
save them if you haven't tossed them...

You should go to Shell's web site and look at the MSDS.  It will have a 
description of the oil in its pristine state as shipped.  That might help.

I hav never seen black oil of any kind when it was new, especially Rotella.

Yes - but all you will be able to tell is if it glows.  I think
it's a lot easier to test it still in the engine.

I attached 12 AWG wire leads to an old automotive dash style
ammeter that reads -30 0 +30 Amps.

To use it, I pop the top off of the glow relay and unplug the
connector for the glow plugs. There is a contact for each glow plug
in this connector.  I clip one meter lead to the fused side of the
big, screw-in fuse and then touch each glowplug contact, one at a
time. The socket has pin numbers molded into it, and these numbers
correspond to the cylinder number.

This method tests the supply 12V, the wire, and the plug. When
cold, a good plug draws about 20A (Well, on my meter it point
to the mark for 20 amps. I have not calibrated or tested the
accuracy of that meter...) It will drop back to about 15A
after 8-10 seconds.

Once the one wire is connected to the fuse, DO NOT LET THE
OTHER WIRE TOUCH CHASSIS GROUND!!!  Or the big fuse will blow
and possibly so will your ammeter. :)

If the plug is bad, the current will usually be less.  If it is
shorted it will be much more.

If the wire or connectors are in poor shape, the current will
be less.

If the supply voltage is low, the current will be less.

Wusthof-Trident.  I first used them in a commercial kitchen.
I got to see how they hold up to heavy use - and I used and
sharpened them.  I'm sure there are other quality knives available,
but I really despise using crummy knives.

Well perhaps it's time to pull the pin, seems like every second post on 
this list is Gary Hurst feeling sorry for himself because everyone picks 
on him and apparently I am spreading lies about him and so on.
Everyone here seems to have the attitude, "we'll put up with that

I am sick of the dribble from poor Gary, plus his posts are hard to read 
because he is too lazy or stupid to use big letters.
perhaps we'll all get fat fingered and lazy and not bother to use proper 
english and that's another wonderful step forward for society but that

Your battery charger won't put out enough current to operate the glow
plug.

- Remove the glow plug (of course)
- Clamp the hex with a pair of vise-grips
- Touch the glow plug's center terminal to one battery terminal
- Touch the handle end of the vise-grips to the other battery terminal,
  if it's not long enough, extend with a wrench or something conductive
- Watch for the orange glow from the glow plug

CAUTION: The glow plug will be REALLY hot!

To test another, release the vise-grips to drop the tested glow plug onto
your concrete garage floor or something equally non-damagable.

I'm sure he would, since someone without the understanding of how the system 
works or how to repair it would be at a real loss.  As these cars age the top 
cylinders are starting to leak, so nearly all of them today will be seeping or 
have started to leak.  It takes about 4-6 hours to R&R all 12 of them, and 
there is a rebuilder out west that does the complete set for under $600 with 
better than OE seals and o-rings.

There is one microswitch in the whole system.  The rest is done through 
magnetic (reed) switches and basic hydraulic operation.  It's actually very 
simple once you sit down and read through the sequence of operation.  
Definitely within the abilities of just about anyone here, for sure.

We have a hodgepodge of kitchen knives: a few cheap ceramics, an old Fiskars
set, some old Chicago Cutlery (USA) including a Chef's knife, a boning knife
and a set of steak knives.  More recently I acquired a few Shun laminated
VG10 knives, including a slicer, a chef's and a paring knife.  These are by
far the best and certainly the most beautiful.  My wife always reaches for
these first.  But all of these knives work ok if they are kept reasonably
sharp.  The Shuns and the ceramics have not yet required any sharpening!

Like OK Don we also have a KitchenAid stand mixer.  We had a discount-store
version (Hobart) since forever, but I recently lucked into a commercial
model on Craig's for cheap.  I almost passed on it because it had a label
"no attachments", but obviously did have the PTO.  I came to realize that
the attachments were not certified for commercial use, thus the label.  The
Hobart was passed along to a son.

Also forever, we have a Cuisinart food processor.  When we lived in NY we
acquired all the blades at steep discount from our frequent trips to
Zabar's.  I wanted to replace it when it stopped working a few years back,
but found that this unit (or any one of equal quality) are NLA.  It was
manufactured by Robot-Coupe of France.  I disassembled it and cleaned and
repaired the switches.  It should be good for another 25 years

egg frying pans to 12 gp Dutch Ovens [and several smaller of various sizes].

If your pan is seasoned correctly and handled correctly, food never sticks.
To preheat, put a small splash of water in the pan,, "rain drops".. heat pan
till water evaporates.. pan is now heated to 212 degrees F. What ever you
put in the pan to cook will make a "Phss" sound when it hits the pan
which braizes meat to seal in juices and flavors... As soon as the "rain
drops" evaporate add EVOO [or coconut oil, or oil of choice] give it a
moment to come to temp while you spread it with spatula and add item to be
cooked..

I will try to attach two pics of one of my seasoned to perfection pans, and
some corn bread pans [list mom please?]

You failed to note that I have a W140 with the same engine. I know all too well 
the tight quarters.

The top hydraulics don't concern me. They are very basic and easily dealt with.

You want tight? Try replacing motor mounts on one of these. I've done it and 
have the wrench to do it.

The rest of the systems are simpler than the W140, which is a plus.

My wife now has several LeCreuset pieces, and loves them, though she did
prove recently that they are not as non-stick as the old (1970) cast iron
skillet is.
We have a KitchenAid stand mixer from around 1985 - the lift-up-the -bowl
type, says Pro on it that has been mixing bread dough weekly since then, as
well as everything else that needs significant mixing. It just keeps on
going. I did buy a new standard mixing blade for it, and an extra mixing
bowl for the holiday meals - hate to crimp her style when she gets going.

Yes, there are some cooking tasks for which cast iron is best.  But, as a
good friend of mine likes to say, "horses for courses".  Enameled cast iron
couples the heat-retaining and spreading features of cast-iron with a
non-reactive interior.  We have a Le Creuset frypan, a Staub sauté pan and a
Lodge French Oven that all perform excellent service.  Even the new T-fal
pans do a great job for fried or scrambled eggs with just a quick spray
instead of oil or butter.

How about cutlery?  How do the snobs (count me in that group!) opine on
kitchen knives?  Stand mixers?  Food processors?

I do have some hard limit rules regarding how it is cleaned and dried, how
it is pre-heated and what heats and oils I use to cook with..

To date I have bought and restored over 40 pieces,,, all the way from one
egg frying pans to 12 gp Dutch Ovens [and several smaller of various sizes].

If your pan is seasoned correctly and handled correctly, food never sticks.
To preheat, put a small splash of water in the pan,, "rain drops".. heat pan
till water evaporates.. pan is now heated to 212 degrees F. What ever you
put in the pan to cook will make a "Phss" sound when it hits the pan
which braizes meat to seal in juices and flavors... As soon as the "rain
drops" evaporate add EVOO [or coconut oil, or oil of choice] give it a
moment to come to temp while you spread it with spatula and add item to be
cooked..

I will try to attach two pics of one of my seasoned to perfection pans, and
some corn bread pans [list mom please?]

Conventional wisdom has it that R129s are cheap for a reason.  I love their
looks and the fact that the running gear is basically a mix of the best of
the 124 and 140.  I've always been scared off, though, by stories of $5K
repair bills to fix the automatic top mechanism.  Also, the V-8s are
crammed in there really tight, even more so than in the late 124s.  Ask
Craig how much fun it was to R&R the PS pump in his E420.

Generally, either the pump pumps or it doesn't.

acceleration, but it would require having a fuel pressure gauge you could read 
from the cockpit to detect that.


Both the fuel distributor and the warm-up regulator are subject to making the 
car act unhappy when they get varnished up inside from storage.


I was going to suggest a 20oz bottle of Marshall's favorite Techron, but if 
you've already run a ton of Seafoam I doubt it would help much.


I think you need to find an indy with the skill to diagnose it, as throwing 
parts at it by guesswork would be cost-prohibitive, unless you had an excellent 
running parts car to swap from.

I'm getting intermittent charging on my 2001 Jeep Cherokee.  This behavior
started yesterday.  Today it was fine all day until after I started it up
after eating dinner.  Then it was around the 9 V and the check gauges 
light
came on.  It worked fine the next two starts, but then I stopped for gas 
on

the way home and it low again.  Volt meter shows 10.8 V when things aren't
working right.  Beat the alternator with a steel drift and it jumped back
to 13.4 V.  This is the original alternator, over 30 miles.  Does
anyone know if this era of Bosch alternators has brushes that can be
replaced as easy a Mercedes?  If so, where the brushes could be purchased?
Are Bosch remans at Mc Parts worth a bit more than double the price?  The
lower cost units are around $127. Bosch is $250-290..

I think as long as the operator is standing on the same platform the changer is 
affixed to, you won't be moving it around when you reef on the handle.

[MBZ] Car Hunting - W129

Here's the dirt:

Youngest son's 2004 Focus is about at the end of it's life.  I can keep it 
running, but there are some issues on the horizon I can't deal with myself, 
which means the potential for putting more into it than it's worth.

I would like to find him a W129 of some sort.  Since these are pretty much 
ubiquitous I figure I can find a decent one for a reasonable amount.  How much? 
 I have a budget of between $3k-$5k.

Based on the market here, $5k can get you a pretty decent earlier model with 
some miles on it but in good condition. $3k would definitely be a fixer-upper 
of some sort, which, depending on what the needs were, I would consider.

I had a buddy who is also looking, but in a higher price range, who has found a 
few (not the one by you, Gerry!)

I still have a line on the 84 380SL I was looking at last week, but the deal is 
somewhat sketchy at this point, as the seller is a relative of the owner and 
this is not a priority for them at this time.  If this panned out I would get 
the 380SL and give him my S500.  I don't see this happening for now.

Why the W129?  He would like a convertible, and there are so darned many of 
these things around that the prices are reasonable.  Also, since I already have 
the S500 in the stable, I'm far more familiar with the systems on the later 
model cars now, and as a result, more comfortable in my ability to maintain 
them.

If you know of or see something that fits this criteria, drop me a note.  I 
will travel for the right car.

Also, does anyone have a good search engine or tool for using with Craigslist?  
I know there are some out there, but I haven't found them yet

I test all of the old ones I pull from the car with this method. I also test 
the new ones before putting them in the car. Last time I did this, 3 of the 5 
still "glowed", just as brightly as the new ones.

I have been asked to put the recent circus called Obamacare into perspective. 
Other than a disbelief in Progressivism as a viable policy, I have tried to be 
at least reasonable about my critique of this administration. I’ve given him the 
benefit of the doubt on most right-wing fear mongering. I don’t put much weight 
into him being a Muslim agent, or Kenyan citizen, I don’t really believe he is 
the Anti-Christ. I’m not wont to call the president, and his cabinet of 
buffoons, evil. Sadly, though, he is turning out to be pretty much what I feared 
all along;


He’s turning out to be as incompetent as every other far-left politician we have 
elected. Not evil, just incompetent. Progressivism is a policy of buffoonery as 
it is, and he is the most Progressive president we have ever elected. It’s just 
that now, with his name-sake achievement out in the open for public consumption, 
no amount of spin and rhetoric can cover for it anymore. That’s the problem with 
building a house of cards, one ill wind will topple it.



So, the best comparison I can offer is the last time we mobilized an entire 
government to accomplish a task. Forget for the moment the cost, the duplicity, 
the falsehoods, and even the spin. Let’s look at what I consider the true 
telling of Progressive incompetence, by the numbers.


We declared war on Japan on December 8th, 1941 a day after the attack on Pearl 
Harbor, and war on Germany on December 11th. We had to build an army, an Air 
Force and rebuild a Navy. We had to mobilize a public and retool our industrial 
base to manufacture tanks, planes, guns and bombs. We had to fight back 
Fascism’s gains in Africa, Italy and across the Middle East. We had to organize 
and implement the largest invasion in the history of the World and beat Germany 
back across the Rhine. Victory over Germany was declared on May 18th, 1945. The 
time it took from the Declaration of War to Victory over Germany was 3 years, 5 
months and 7 days. Actually amazing when you consider it.


Now, let’s look at the modern equivalent;

The Affordable Care Act was signed into law and fully funded on March 23rd, 
2010. The website roll out, the public face of the act, was rolled out on 
October 1st, 2013. They had the entire Federal Government working on this 
program, and spared no expense. From implementation to execution of the law took 
3 years, 5 months, and 8 days. 1 day longer than it took to declare victory in 
Germany. Look at Germany today. Look at Healthcare.gov. Draw your own 
conclusions as to how well a bureaucracy can run anything, much less a program 
that impacts every one of us. Anyway you look at it, it is incompetency on parade.


The saddest of all, is not the bumbling, the lies, the incompetence. Even the 
hard core left Democrats are turning on the administration now. Clinton, 
Landreau and even Feinstein are now dodging for cover and looking for excuses. 
All trying to save the Democratic brand. Clinton of course knows this debacle 
will crush Hillary’s chance at the presidency. Landreau is up for reelection 
this year, so it’s no surprise her and 18 other Senate Democrats are now crying 
about the bill. Feinstein knows it will overturn the Senate in 2014, so she’s 
now panicked. Even the Democratic cheerleaders in the domestic media can no 
longer cover for a farce this obvious. Their ratings are in the toilet, and 
they’re starting to figure why. The thing that is making me witless this 
Wednesday is that a majority of voters still haven’t seemed to figure out what 
kind of albatross they have had strapped to their futures. What’s the old 
saying? No matter how big the fool, there is always a bigger fool to follow them.


So, another Wednesday, another reason to be witless. If you can excuse this 
debacle, or point blame anywhere else but this incompetent administration; then 
welcome to the witless class, they have you right where they want you. I leave 
you with a few reminders before you consider voting in 2014.


And before you consider putting another progressive in office, the last word on 
the matter;

Your battery charger won't put out enough current to operate the glow
plug.

- Remove the glow plug (of course)
- Clamp the hex with a pair of vise-grips
- Touch the glow plug's center terminal to one battery terminal
- Touch the handle end of the vise-grips to the other battery terminal,
 if it's not long enough, extend with a wrench or something conductive
- Watch for the orange glow from the glow plug

CAUTION: The glow plug will be REALLY hot!

To test another, release the vise-grips to drop the tested glow plug onto
your concrete garage floor or something equally non-damagable.

I use ONLY coconut oil on my seasoned pan..thanx for some great  tips. 
I eat 2 tblspns of coconut oil a day for "da" brain as well as  cutting down 
on appetite cravings. Helped me tremendously since my stroke 4 yrs  ago. At 
63 I'm back to  playing basketball again
