We make Kefir from raw milk here in Vermont, and I was using Kefir grains
for the first few years, but they were a lot of trouble and never made very
good kefir as far as I was concerned.  I finally threw out the grains, which
were multiplying out of control, and making kefir that did not taste good,
and instead started using this kefir starter.  Now I get thick, delicious
kefir every time:

There is something called water kefir.  Go to the website that was posted,  you 
will find all you need there.  The same person ( Dominic) who put up that 
website is also the one who started the Yahoo group  I mentioned.
By definition  kefir is  fermented milk, so don't know how you could get by 
without it.

Here in Texas, I have not had trouble with my milk kefir grains unless I have 
been careless with them. The do grow, and I eat the excess growth. I always 
have a small lump for making milk kefir, and my grains make it in less than 24 
hours! 

I love the taste of the raw milk kefir made from the grains very very much. 
Sometimes I leave it lumpy thick; other times I put it through a plastic 
strainer to make it very smooth but thick. Whatever way I do it, it is always 
thick and delicious. I also feed it to my dogs who are thriving on it. My 
grains have been with me for a long time. And if they were to have a problem, I 
would get more grains.

I make my own with my fresh raq goat milk. I let my body dictate how much I 
drink. Usually I drink it straight, but this time of year, I blend it with 
peaches into a smoothie.

I always freeze extra milk in quart jugs. It seems to be as beneficial as fresh 
after I defrost it. I make kefir and cheeses with it.

Grains are used to ferment the kefir.   They are generally  strained out before 
drinking and used for the next batch,  When you have enough to spare  they  CAN 
be eaten and are quite useful in combating diseases.

Great stuff !

I make kefir of milk for many years and it is a wonderful home made
fermentation.

There is also kefir of water that it is with water and brown sugar. I also
made it in the past but had to stop as we can not drink it all as the
production grows very fast.

One can do kefir of water with juices.

Also do consider reseach about kombucha, one other home made fermentation...

I also use kefir grains to ferment in goat milk.  The yahoo group is fantastic. 
 The grains looklike minature cauliflowers.   Many that are part of the Weston 
A Price groups have kefir and kombucha.  They usually are willing to share but 
the grains can be bought.  I had problems with bought grains (dehydrated) 
getting them to grow.  Kefir multiply as they mature and then you can divide 
and share.  My husband likeskefir smoothies with fruit added. Check out

Yes,  I too  like the smoothies.  Currently using raw milk and trying to find a 
source for goat milk.  I don't particularly like the taste of plain kefir,  but 
I know how good it is for me.  If nothing else is available  I will add a few 
drops   of a flavored liquid stevia.

Here in Texas, I have not had trouble with my milk kefir grains unless I
have been careless with them. The do grow, and I eat the excess growth. I
always have a small lump for making milk kefir, and my grains make it in
less than 24 hours!

I love the taste of the raw milk kefir made from the grains very very much.
Sometimes I leave it lumpy thick; other times I put it through a plastic
strainer to make it very smooth but thick. Whatever way I do it, it is
always thick and delicious. I also feed it to my dogs who are thriving on
it. My grains have been with me for a long time. And if they were to have a
problem, I would get more grains.

Store bought kefir is not kefir at all, it's a fake. If you're in SC, you
can legally by raw milk that has been certified safe for human consumption
by SCDHEC (SC has an excellent program for this), get kefir grains and make
your own. Of course it's still an acquired taste, one which I have totally
acquired. My first exposure to kefir was store bought also, and if that's
all I'd ever had, I wouldn't be drinking it. Now I have to limit drinking
it; I love the stuff.

Right now, my son-in-law, who'd always been told that he was dairy
intolerant, is recovering from a chronic ear infection that the doctors
couldn't cure, that CS didn't cure, by drinking real kefir and eating
homegrown fertilized raw eggs. You're not dairy intolerant until your body
has rejected raw milk (I'd better qualify that to say truly good raw milk)
and even then, you can most likely drink kefir, because the kefir grains
convert lactose to lactic acid, B vitamins and some kind of good sugar that
I can't remember the name of right now.

The statement that CS didn't cure it is not meant to disparage CS, which is
a staple in this house (and I've bought generators for my married children).
I think some of the failures of CS and many other therapies are attributable
to the terrible nutritional quality of our US food supply that is grown for
nothing but pretty and profit.

I just brew my own fresh. It's easy  you control what milk is used to
brew it. I use a local organic whole milk, so I know exactly what's in
there. I do have to add 1/8 - 1/4 C of a commercially made smoothie
(like Tillamook Vanilla Smoothie) for my husband to get it down, but I
love it plain with a 1/4 tsp of cayenne pepper stirred in. YUM!

 

Here's a site where you can read up on making your own if you're
interested  even buy starter babies from the host. He's extremely
knowledgeable about kefir and is generous with advice. His kefir babies
make the smoothest, creamiest, beer-iest kefir I've tasted.

I have tried the Helios brand whiuch is supposed to be the best and the flavor 
I tried was the vanilal and it seemed very tasty. I had never tried kefir 
before that so have nothing to compare it too. I also added soem Chlorella 
growth factor to it sometimes to make the organisms grow faster. It is supposed 
to increase the growth of the probiotics by about 4 times.

I believe I understood that the risk in fermenting coconut was with
fermenting the solids, not the milk; and that the temperature of the
fermentation/amount of lipids were also factors in causing the toxicity.
I can't remember it exactly either...time to do a little research! :o)

Go take a look at Dom's site in re to soy kefir.
You can make kefir with soy milk, as well as rice milk, almond milk,
goat milk, even Water kefir. (kefir d'aqua)

The one draw back with soy kefir, the grains do not do as well in soy
milk.
Allowing them to ferment, periodically in other milks- dairy, goat is
necessary to keep the grains healthy, productive.
I believe Dom recommends at least once every 4 or 5 days.

I checked the web for more info on Kefir, and found that for the most
part, animal milk is used in the process. Does anyone know if you can
use something other - say: soy milk - as a substitute?

Go take a look at Dom's site in re to soy kefir.
You can make kefir with soy milk, as well as rice milk, almond milk, goat
milk, even Water kefir. (kefir d'aqua)

The one draw back with soy kefir, the grains do not do as well in soy milk.
Allowing them to ferment, periodically in other milks- dairy, goat is
necessary to keep the grains healthy, productive.
I believe Dom recommends at least once every 4 or 5 days.

Tracy, are you on the Kefir making list?
There was something said in the last 6 weeks or so about coconut milk kefir.
I think there is some risk. I am sorry I do not know beyond this. Couldn't
tell you what risk.

Abstract:
Tempe bongkrek is an Indonesian food made by fermentation of coconut
presscake or coconut milk residue [by] Rhizopus oligosporus. Consumption of
tempe bongkrek is associated with a food-borne human intoxication and
significant numbers of deaths annually. The bacterium Burkholderia
cocovenenans , which is the causative organism, produces two toxins,
toxoflavin and bongkrekic acid (also commonly referred to as bongkrek acid).
The reasons why these poisonings occur only in a very limited number of
foods and only in isolated regions of the world are unclear. Our preliminary
experiments in defined media and coconut investigated several compositional
and environmental factors and suggested that lipid type and/or concentration
were important. The effect of lipid concentration and fatty acid type on the
production of bongkrekic acid by B. cocovenenans was examined by adding
different amounts of coconut fat or individual free fatty acids to defatted
and sterilized Rich Coconut Media (dRCM). The dRCM with added lipid was
inoculated with B. cocovenenans , incubated at 30°C for 5 days and the
amount of bongkrekic acid formed quantified by HPLC. Coconut fat
concentrations of 10% (dry basis) or less did not result in detectable
amounts of bongkrekic acid even though the B. cocovenenans grew to high
levels. Forty and 50% coconut fat resulted in as much as 1.4mg/g bonkrekic
acid (dry weight) at the same level of growth. Of eight saturated fatty
acids tested, only lauric (12:0), myristic (14:0), and palmitic (16:0)acids
stimulated the production of detectable amounts of toxin. When four
18-carbon free fatty acids with different degrees of saturation were
compared, significant amounts of bongkrekic acid (2.62mg/g dry weight) were
produced only with oleic acid (18:1). These data indicate that the
concentration and type of lipid in the substrate is critical for bongkrekic
acid formation. This may explain why bongkrekic acid intoxication is limited
to certain foods. Outbreaks associated with foods containing less than 20%
fat may be a result of toxoflavin formation and not bongkrekic acid
formation.

He does share his grains, even sends them to the US.
The grains I have are not from Dom's stock, at least not that I am aware of.
My grains were sent to me from Upstate NY.

all over the world, who also share kefir grains from time to time.
