If the autopilot ram is doing double duty as a rudder stop, that is bad. You
need to re'locate the rudder stop further inboard on the quadrant to limit
travel and then re-set the throw on the AP. Most autopilot Rams will mount
roughly 8" from center on your rudder post.

I get a little less than 3/4 of a turn to the port and to the stbd.
Whenever I make adjustments I make sure that the amount of travel is equal
on both sides and then of course make sure that with the wheel centered it
steers a straight course.

On my 34, there is a rubber stop on top of the quadrant, on centerline. It has
hard stops on a laminated rib to either side on the bottom of the cockpit.
There is no adjusting, it's an Edson system.
I am at about 300 degrees of movement on the wheel from center to hard over.
