Do you really mean IMAP? Or do you mean MAPI?

You can do what you are suggesting with MAPI on any version of Exchange. It's

distribute/manage users messages. These include our voicemail server.

Perhaps a more relevant question might be: why do they care? You never see the
organization name unless you go hunting for it...

I just found one system folder left with the old server name mentioned
and thats the System Configuraton folder. (PF with System Folders
enabled)
When i try and remove the old server i get prompted for a username and

If so, try to delete the old PF store. That generally provides clues.
