Seemingly inexplicably, Say All has begun pausing between lines, even
though I have tried it both reading by sentence and by line without
pauses. It's almost as though whichever setting I choose, Say All
reads with pauses.

I think one of the best commands for new users to remember and use, is the
Key Describer: INSERT + 1 on the number row. This Toggles the keyboard help
on /off which means you can hear what JAWS would do

I respectfully disagree because I can use either method with Jaws v15.
