Tagging the parents would be tricky but you can easily export the file
including all tagged persons and, checking a box "Include Parents of
Tagged Individuals".

I would make the letters Master Sources, identified by the writer "Letter
from Sarah Smith, 27 August 1932" and attach that Master Source to each
person mentioned in the letter. In the Detail portion for each person, I
would enter the text that applied to them.
