OMG!?!?! Im a such an idiot I accidentally had a set of additional custom recording profiles. And you can guess, the custom recording profiles were all at their default settings of 480x480 and a max bitrate of 6000kbps. D'OH! Now that I changed those settings, everything thankfully works
