from scratch: it uses the wild yeast in the air to seed it. When I
moved into this present house, it would always turn bad- I could not
get any starter to work. Even when I got new good starter from my mom,
it would go off

That does not happen to be true for me. I can't tolerate yeast bread
when my mold reactions are in an uproar. I can't tolerate the smell
even without my sinuses going bonkers. I am a more extremem case,
however.
