Looked up the town of Eden in SW Wyoming.  The satelite view shows
plenty of agriculture, but obviously irrigated.  If you can find
water, you should be able to grow stuff during the summer.
Temperature looks no worse than Minnesota...

Perhaps an economic opportunity...
