I *think* the cancer link is due to the increased animal fats, especially
if not organically raised... meaning exclusively grass-fed which would give
the meat a healthy lipid profile. Animals "finished" on corn/grains have
an unhealthy HDL/LDL ratio. Also, agri-business animals are given large
quantities of anti-biotics as well as hormones. Perhaps more importantly,
meat is an acid forming food.
I recently read that meat containing arachidonic acid (pork?) is
pro-inflammatory, but I have to research that some more.
All in all, I think sticking to grass-fed meat is best, but I can't really
afford to do that because where I live org. meat costs double or triple
the amount of the regular crap. So, I try to balance out the HDL/LDL
problem by consuming high-quality, molecularly distilled fish oil which,
btw, is also anti-inflammatory.
A recent blood ananlysis showed that my cholesterol, although high in
total, was higher in the "good" HDL which my doctor thought it was "great".
The problem of "acidity", however, must be dealt with and I haven't
really tackled that one yet. (I have trouble eating anything but
over-cooked veggies due to adhesions. Juicing is tiresome, but that's the
only way I can think of for me to get the alkalinizing veggies into my
diet.)
