For the purposed of Attic protection I would use listed Attic Specific
application sprinklers. Wood trusses fail fast at the metal plates, and
composite wood joist fail in the thin flange between the stringers. In this
application, I don't think NFPA 13 cares what type of joist are used, only
if they are combustible or not.

Subject: Unoccupied Attics pitch greater than 4 in12
8.6.2.2.1(a) 02 references "combustible wood joist or wood truss
construction". Most of the spacing requirements (i.e. 8.6.4.1.4.2 &
8.6.4.1.4.3) for slopes greater than 4 in 12 are prefaced by
"combustible concealed spaces of wood joist or wood truss construction".
What if the construction is 18" composite wood joists on 2 ft centers?
NFPA is pretty clear that composite wood joists are not the same as wood
joists.
