BTW, the ones I was referring to are the ones installed outside the building
with the door being on the inside the building. Hence the sidewalls.

The reason I am asking the question in this particular case is that the
units are free standing outside and we DO know what they are storing in
them. Pendents are out of the question per the owner - Fed Govt - and the
Fire Chief is unsure of what he wants. He is trying to make a bad situation
better and we are trying to do it correctly without going overboard. 2 of
the coolers are side by side with a common wall so there is no way to put
sidewalls on opposite sides of the wall even if we wanted to. They don't
want pipe inside, EC heads will not meet the letter of the law due to the
units inside.

I was trying to get a feel for what others are seeing/doing in these cases.

Most of the time it depends on the arrangement of the evaporators in the
freezer and rack layouts. When the HVAC units are hung down the center you
can most times access the walls for HSW's but if the evaps are down the
sides you can often use dry pendants in the ceilings.

In central Puget Sound I am used to seeing dry pendant sprinklers used in
freezers. I've seldom seen sidewalls used.

This came up on a recent job.
The GC said that everyone else does it, so why can't we?
I told them they would need to sign a waiver and obtain Building Official
approval.

The problem is the fact that everyone else is doing it, as you reference.
They are setting a false standard.

I stood my ground and won the battle with the GC. At the close of the
project, there was a meeting with the Architect called "Lessons Learned"
which all subcontractors were asked to attend.
I suggested that they invest in consulting a FPE to review their plans for
matters such as this. They replied that the jobs are bid design build for
fire protection.
I didn't bother explaining that the individual that prepares my shop
Drawings is a Fire Sprinkler Layout Technician and not a Designer/PE and
that most sprinkler companies do not employ PEs.
If your customer would have consulted an FPE prior to bid, the PE may have
said that we need room to run piping along the freezer.

Pretending the problem doesn't exist is not the best solution, I would tell
them you need room to run the pipe unless they want to pay extra for a dry
system or antifreeze.
Also, if you use the large K factor dry sidewalls they zany store within 36"
of ceiling? Most owners would decline that option.
