If there's a horse riding arena with a roof (with 2 or 3 open walls) that covers just the riding area, I would probably map a single closed way with building=roof + leisure=pitch.
If there are other areas under the same roof, like bandstands to watch the show and changing areas or toilets, it would be idea to map the area of the pitch and the area of the building=roof separately, and then I might add covered=yes to the leisure=pitch (though I suppose this is not strictly necessary). You could add building=roof if it's mapped as an area and the area is the same as the roof, but in your example the roof is donut-shaped.
