Try this quick shell script, "usermover":

#!/bin/sh

if [ -z "$1" || ! -d "/Volumes/$1/." ]
then echo "Usage: usermover volume-name"; exit 2
fi

cd /
ditto -rsrcFork Users "/Volumes/$1/Users"
mv Users Users.bak
ln -s "/Volumes/$1/Users" Users

Warning: this script is not tested, just desk-checked, but it's basically
what I did. It's safe, in that you can go back to Users.bak if you run into
problems.
