Because it doesn't. It doesn't do Altivec. It doesn't run at full speed. Steve was careful to only run the emboss function in Photoshop, and still Photoshop seemed sluggish. It doesn't handle plugins, each application is all-or-nothing. That also means no Dashboard widgets with native code elements.
