As so often, Paste Special is your friend.
o Save your document. Keep the original so that you can continue to work with the fields.
o  Save a copy of your document under a different name.
o In the new document, cut or copy each field and then use Edit | Paste Special... (or right-click | Paste Special... or Ctrl+Shift+V) to paste the material back in the same place.
o  In the Paste Special dialogue, select "Unformatted text".

In the case of this document, you can find the captions containing the fields quickly:
o  Go to Edit | Find & Replace... (or Ctrl+F).
o  Click More Options.
o  Tick "Search for Styles".
o  Under "Search for", select Drawing.
o Click Find. For each caption containing a field, replace with unformatted text as above.

Sadly, I don't see any way to make these changes globally: only going through the fields one by one.
