When I first saw Angus's email I tested this option using my Curtin email account, which isn't in my address book. It wasn't added, so I concluded that it doesn't cause unknown addresses to be added, just creates a Link between the message and a Contact.
It still sounds a lot like the action of a rogue Mail Rule...
