but a change in level wouldn't equate to a change in pitch... and the "beating" can be phase-sensitive in so far as the intermodulated sound changes - this is the basis of many guitar effects such as quasi-flanging, quasi vibrato etc...I say "quasi" because these effects are actually phase changing/modulation but give rise to apparent pitch modulations when the phase-shifted and normal sounds are mixed.
To test this, I tried flipping the phase switch on my guitar whilst tuning up/down to an audible fixed (440Hz) tone - this time there is a definite change in the sound in the beat patterns.
