There's a guy in our creek who drysails his ancient Morgan 
32....modified full keel. He just
has his boat chocked in with some preset jackstands/pads attached to 
some fairly stout
pressure-treated lumber...looks like 6x6.

This shouldn't be too big a deal and is very do-able. Trust me, that old 
Morgan weighs
a helluva lot more than a Catalina 27...no biggity deal.
