When you "delete" from a view (Inbox, a label/folder) the mail stays in the
"All Mail" folder (my HOF Lists "All Mail" folder has 26,000 messages in it
for example).  When you delete from the "All Mail" (or "Spam") folder
specifically it moves to "trash" and then, finally, when you delete from
trash (or just wait 30 days) it's gone for good.

This is the same on every device/application I've used but it looks like the
iPhone (of course) does whatever the hell it wants:  ;^)
