But I did (today ) restart the machine , what are the odds of it not loading 2 separate times? I Had to add her main profile back to outlook- yet her second profile (jobs@) was intact-

It doesn't necessarily use the profile settings at that point. Once you log out and back in again it will sometimes reset, which winds up with your original profile. It may explain the behavior she saw. You should be able to see an instance in the Event Viewer if this occurred. Has anyone heard of something like this before?
