Yes, it was bad advice I gave (not being at home, I couldn't verify). The gnuplot_x11 executable is not a standalone application, it is only a driver for x11 used by the main gnuplot program. You should probably make a feature request, either on the package-request tracker or by mailing the gnuplot maintainer directly, to have a package that does not have the aqua terminal built in and is not linked to any system framework.
