Why not just drag the Utilities (or any) folder into the dock to the
right of the separator?

Then click and hold the left mouse button on the folder, scroll to
the item you want, and release.

Yes, certainly this can be done... but I find the micky mouse dock just does not agree with my constitution (I still use it usefully...) :)
