Plus, at one time, AppleTalk was called LocalTalk, which could mean the networking protocols or the actual cable it ran over.

No. AppleTalk was always AppleTalk - a published stack of networking protocols.

When it first came out the only lower layer protocol available was LocalTalk and Apple referred to it and the upper level protocol as "AppleTalk". When they started supporting Ethernet (EtherTalk) they started differentiating AppleTalk and used LocalTalk for the 230,400 bps twisted pair protocol.

LocalTalk is a lower software layer (more or less just above the physical device driver), that lets the higher AppleTalk layers transit RS232/442 serial daisy-chains.

TokenTalk does this over token ring LANs.

EtherTalk does this over Ethernet.

IRTalk over IR.

ARA is AppleTalk over dialup

MacIP tunnels AppleTalk through TCP/IP networks.

Other way around. Mac IP runs IP through an AppleTalk network. There are methods for tunneling AppleTalk through TCP/IP but can't recall hearing a term I for it.
