Sounds like you may not have the Helvetica PFM/PFB files. So it could be that in the printer setup you may not have selected "download all fonts" and could have some other option selected. If the PC that has Distiller on it has the HV***.pfm and HV***.pfb files on it, then copy/move them to the font resource folder Acrobat uses.

Yes, and the Distiller settings are set that is the font is not found, to cancel the job. Yet it passes the job.

the system that is doing the distillation

No. Distiller is running on a PC with no other applications installed, and the file is from a Mac using Distiller as the PPD.
Also, I think you need to look at the underlying PostScript with an editor to
see if there are any references to Helvetica.
It appears, as best as I can decipher PostScript, that Helvetica (as well as Courier) is showing up in the section for document info (/DOCINFO pdfmark). I am sure that anyone can recreate this using the same workflow. Distiller 5 must have been set to ignore the data in that section.
