Did this take place in New Jersey?  NJ follows the standard discovery rule 
(2 years from the date of the occurrence).

Dole (and other spinach producers) will provide expert testimony stating 
ulcerative colitis is idiopathic.  A genetic link is present in less than 
20% of cases.  Didn't you have a bout of diverticulosis a while ago?

Shit happens is right, shit happens to companies that are negligent
also.

The spinach was recalled for a reason moron. The spinach maker has had
million$ in legal settlements because they were found negligent, not
because of something beyond their control.
It wasn't because some kid didn't wash his hands, or a dog pooped in
the spinach field, it was because they sprayed it with manure and
didn't wash it thoroughly.
Now my niece has pain, lost wages and has to live with the
consequences the rest of her life if not have a serious surgery.

A lawyer specializing in food poisoning would be able to tell her if
she has a case or not because the lawyer would be privy to certain
information that the average person is not aware of.
