However if it was me I'd get a u-blox EVK <

and plug it into something like a PCEngines APU2.  If you want to go all in
Jackson Labs makes some delightful devices but they are mostly GPSDOs that
happens to emit PPS.  I have a JL Fury which is the only device I've used
that does NMEA with sub-millisecond jitter.

I would not bother with the ultra low cost options like credit card
computers with a GPS daughter-card.
