CHOCOLATE IRISH CREAM CHEESECAKE I have made this; and it's one of my family's favorites. 1 cup chocolate wafer crumbs, about 18 wafers 1/4 cup butter melted 1/2 tsp cinnamon 3 8 oz. pkgs. cream cheese, softened 1 8 oz. carton sour cream 1 cup sugar 1 8 oz. pkg. semisweet chocolate melted and cooled 3 eggs 1/2 cup Irish Cream Liqueur, 2 tbsp. whipping cream or milk 2 tsp. vanilla fresh raspberries for garnish, optional 1/3 cup semisweet chocolate pieces melted, optional FOR CRUST: in medium mixing bowl combine crumbs, melted butter and cinnamon. Toss gently to mix. Spread evenly on bottom of 9 inch springform pan. Press onto bottom to form a firm crust. For filling: In a large mixing bowl combine cream cheese, sour cream, sugar and the 8 oz. Melted chocolate. Beat on medium to high speed 'til combined. Add eggs all at once, beating on low speed 'til just combined. (DO NOT OVERBEAT). Stir in the liqueur, whipping cream or milk and vanilla. Place pan on baking sheet (I line it with foil) and pour the filling onto the crust. Bake in preheated 325 oven for 50-60 minutes or until center appears nearly set when gently shaken. Cool in pan on wire rack for 15 minutes. Loosen sides of pan. Cool for 30 minutes more on the rack. Now, remove the sides of pan and cool completely. Cover and chill cheesecake for at least four hours or overnight. Before serving, transfer cake to a platter. Re: [CnD] Recipe Request: Mashed Potato Fudge
I googled mashed potato fudge, and I found a ton of recipes. This one sounds really good. Ingredients: 1/2 cup unseasoned, well-mashed cooked potatoes (about 1 medium potato)* 3 cups powdered (confectioners) sugar 1 cup flaked or shredded coconut 1 teaspoon pure vanilla extract 3 ounces semi-sweet chocolate 3 tablespoons butter * You can also bake a medium-size potato and mash it while still hot. The mashed potatoes should equal 1/4 cup. Learn how to make Perfect Mashed Potatoes. You can also use instant mashed potatoes to make this candy. Preparation: Bake or microwave the potato until a fork pierces it easily. While the mashed potatoes are still hot, beat in the powdered sugar and coconut; then add the vanilla extract. Press into a lightly greased 8-inch square pan; set aside. In a saucepan over low heat, melt chocolate and butter, stirring occasionally. When melted, pour over top of the potato mixture. Refrigerate until set and then cut into squares. Store in an airtight container in the refrigerator. Makes 64 1-inch pieces. ___ Cookinginthedark mailing list Cookinginthedark@acbradio.org http://acbradio.org/mailman/listinfo/cookinginthedark

[CnD] marshmallows
Marshmallows 1 cup confectioners' sugar 3 1/2 envelopes (2 tbls. plus 2 1/2 teas.) unflavored gelatin 1/2 cup cold water 2 cups granulated sugar 1/2 cup light corn syrup 1/2 cup hot water (about 115F.) 1/4 teaspoon salt 2 large egg whites 1 teaspoon vanilla Oil bottom and sides of a 13- by 9- by 2-inch rectangular metal baking pan and dust bottom and sides with some confectioners' sugar. In bowl of a standing electric mixer or in a large bowl sprinkle gelatin over cold water and let stand to soften. In a 3-quart heavy saucepan cook granulated sugar, corn syrup, hot water, and salt over low heat, stirring with a wooden spoon, until sugar is dissolved. Increase heat to moderate and boil mixture, without stirring, until a candy or digital thermometer registers 240F, about 12 minutes. Remove pan from heat and pour sugar mixture over gelatin mixture, stirring until gelatin is dissolved. With standing or a hand-held electric mixer beat mixture on high speed until white, thick, and nearly tripled in volume, about 6 minutes if using standing mixer or about 10 minutes if using hand-held mixer. In a large bowl with cleaned beaters beat whites (or reconstituted powdered whites) until they just hold stiff peaks. Beat whites and vanilla into sugar mixture until just combined. Pour mixture into baking pan and sift 1/4 cup confectioners sugar evenly over top. Chill marshmallow, uncovered, until firm, at least 3 hours, and up to 1 day. Run a thin knife around edges of pan and invert pan onto a large cutting board. Lifting up 1 corner of inverted pan, with fingers loosen marshmallow and let drop onto cutting board. With a large knife trim edges of marshmallow and cut marshmallow into roughly 1-inch cubes. Sift remaining confectioners' sugar into a large bowl and add marshmallows in batches, tossing to evenly coat. Marshmallows keep in an airtight container at cool room temperature 1 week.
