I remember when I was a little girl, my grandmother made hominy, It was soaked 
in lye.  The hard kernel field corn was used, I think.  It has no nutritional 
value at all.

IMPOSSIBLE TURKEY PIE
   2 cups cooked turkey cut up or cooked chicken
   4 1/2 ounces sliced mushrooms drained
   1/2 cup sliced green onions
   1/2 teaspoon salt
   1 cup shredded Swiss cheese
   1 1/2 cups milk
   3/4 cup bisquick.
   Baking mix
   3 eggs
   Heat
oven to 400 degrees. Lightly grease pie plate, 10x1 1/2-inches. Sprinkle turkey,
mushrooms, onions, salt and cheese in pie plate. Beat remaining ingredients 
until
smooth, 15 seconds in blender on high speed or 1 minute with hand beater. Pour 
into
pie plate. Bake until golden brown and knife inserted halfway between center and
edge comes out clean, 30 to 35 minutes. Let stand 5 minutes before cutting. 
Refrigerate
any remaining pie.

CHOCOLATE IRISH CREAM CHEESECAKE
I have made this; and it's one of my family's favorites.


1 cup chocolate wafer crumbs, about 18 wafers
1/4 cup butter melted
1/2 tsp cinnamon
3 8 oz. pkgs. cream cheese, softened
1 8 oz. carton sour cream
1 cup sugar
1 8 oz. pkg. semisweet chocolate melted and cooled
3 eggs
1/2 cup Irish Cream Liqueur,
2 tbsp. whipping cream or milk
2 tsp. vanilla
fresh raspberries for garnish, optional
1/3 cup semisweet chocolate pieces melted, optional

FOR CRUST: in medium mixing bowl combine crumbs, melted butter and cinnamon.
Toss gently to mix. Spread evenly on bottom of 9 inch springform pan. Press
onto bottom to form a firm crust.

For filling: In a large mixing bowl combine cream cheese, sour cream, sugar
and the 8 oz. Melted chocolate. Beat on medium to high speed 'til combined.
Add eggs all at once, beating on low speed 'til just combined. (DO NOT
OVERBEAT). Stir in the liqueur, whipping cream or milk and vanilla.
Place pan on baking sheet (I line it with foil) and pour the filling onto
the crust. Bake in preheated 325 oven for 50-60 minutes or until center
appears nearly set when gently shaken.
Cool in pan on wire rack for 15 minutes. Loosen sides of pan. Cool for 30
minutes more on the rack. Now, remove the sides of pan and cool completely.
Cover and chill cheesecake for at least four hours or overnight.
Before serving, transfer cake to a platter. If desired, garnish with fresh
raspberries and the 1/3 cup melted chocolate.

Heat oven to 400ºF. Grease 9-inch pie plate. Sprinkle chilies, cheese and 
cilantro in pie plate.

Bake 25 to 30 minutes or until knife inserted in center comes out clean. Cool 5 
minutes. Serve with salsa if desired.

I heard somewhere about a cake recipe where you place marshmallows in the 
bottom 
of the pan, then pour cake batter over them and bake it. The marshmallows are 
supposed to rise to the top and create frosting.  Does anyone have a recipe

BROWNIE IN A MUG
1 12-ounce microwaveable mug
2 tablespoons flour
4 tablespoons sugar
2 tablespoons baking cocoa
1/4 teaspoon salt
1 egg
3 tablespoons milk
3 tablespoons oil
1 teaspoon vanilla
1/2 cup chocolate chips
Mix flour, sugar, cocoa and salt in the mug. Add egg, milk, oil and vanilla;
stir vigorously until batter is thoroughly mixed. Place the mug in the
microwave and cook on high 1 minute. Add chocolate chips; don't stir. Cook
an additional 45-60 seconds. Remove from microwave: the brownie will
continue to cook while cooling. Cool at least 5 minutes. Serve warm, with
two spoons for sharing. Or, tip the brownie out onto a plate.

1 1/2 cups chicken flavored dry stuffing mix (stove top)
1/3 cup milk
2 1/2 pounds ground turkey
2 large eggs

How To Make Thanksgiving Meatloaf

Easy Recipe Directions:
Preheat oven to 350 degrees F (175 degrees C). Mix together turkey, stuffing, 
eggs, and milk in a large bowl. Mixture will be lumpy. Spread mixture in 9x5
inch loaf pan. Bake for 1 hour until temperature reads 165 degrees F in center 
of loaf. Makes 1 -9x5 inch loaf

3 ounce package lemon Jell-O
1 cup hot water
2 tablespoons granulated sugar
1/4 teaspoon pumpkin pie spice
1 cup canned pumpkin (not pie mix)
1 small container Cool Whip
1/2 cup chopped pecans
Dissolve Jell-O in boiling water; add sugar and spice. Add pumpkin,
mixing well. Chill until slightly thickened.
Fold in Cool Whip and nuts. Pour into mold or clean bowl and
refrigerate until firm.

Preheat oven to 350 degrees. In a large bowl, combine sweet potatoes, butter, 
brown sugar, granulated sugar, eggs, milk, pumpkin pie spice and nutmeg. Beat 
until well blended. Spoon mixture into pie crust. Bake until filling is firm, 
about 45 minutes.

MARTHA'S MEANT TO BE CHEESE DANISH

2 pkgs. refrigerated crescent rolls (8 rolls each)
2 pkgs. (8 oz. each) cream cheese, softened
1 1/2 cups sugar, divided use
1 egg
1 tsp. vanilla
1/2 cup butter or margarine, melted
1 tsp. ground cinnamon
1 cup chopped pecans

Preheat oven to 350 degrees F. Grease a 13x9 in, baking dish.

Unroll one can of crescent rolls and press in to the bottom of the baking
dish, pressing perforations together to form a flat sheet of dough. Ease
edges of dough slightly up the sides of dish.

Combine cream cheese, 1 cup of sugar, the egg and vanilla. Spread over
crescent roll dough. Unroll other can of crescent rolls and place over cream
cheese layer, pressing perforations together. Press edges together to seal.

Combine melted butter, remaining 1/2 cup of sugar, the cinnamon and the
nuts. Spread evenly over the top layer of dough.

Bake about 30 minutes or until golden. To serve, cut into rectangles.

I use ground turkey for meatloaf, too.  I just make sure the ground turkey is 
fresh.  I don't trust frozen ground turkey.  No telling what's in there.  I 
like 
to use a seasoned stuffing mix instead of bread crumbs along with finely 
chopped 
onions and celery.

Not sure if this is the one you want, but here goes:

Meatball Ravioli Casserole

2 (9 oz.) pkg refrigerated cheese ravioli...or thaw the frozen ones
2 teaspoons Olive oil
1/2 cup chopped green bell pepper, (1/2 medium)
1/4 cup chopped onion, (1/2 medium)
1, 28 ounce container your favorite spaghetti sauce
1, 16 ounce package frozen meatballs, thawed
1 cup shredded Mozzarella cheese
1/4 cup grated Parmesan cheese

Preheat oven to 375 degrees. Cook ravioli with package
directions. drain. Meanwhile, heat oil in a large skillet
over a medium/high heat until hot. Add pepper and onion.
Sauté until crisp tender, 2 to 3 minutes.

Stir spaghetti sauce and meatballs into vegetables in skillet. Cook
over a medium heat until thoroughly heated, 3-5 minutes.

Combine ravioli with spaghetti sauce and meatballs. Place in an
ungreased 3 quart baking dish, mixing well. Sprinkle the Mozzarella
on top and the Parmesan on top of that.

Bake until cheese is melted and the mixture is bubbly,
approximately 25 to 30 minutes.

Pumpkin Bread Pudding
INGREDIENTS:
List of 13 items
. 8 ounces French bread, torn into small pieces, about 5 cups
. 2 cups half-and-half, or half milk and half cream
. 3 large eggs
. 2/3 cup granulated sugar
. 2/3 cup brown sugar
. 1 can (15 ounces) pumpkin puree
. 1 cup dried cranberries
. 3 tablespoons melted butter
. 1 teaspoon ground cinnamon
. 1/2 teaspoon ground nutmeg
. 1/2 teaspoon ground ginger
. 1 teaspoon vanilla
. cinnamon sugar, optional

PREPARATION:
Butter an 11x7-inch baking dish. Heat oven to 350°.

In a bowl, cover the torn bread with the half-and-half; set aside.

In another bowl, combine eggs, sugars, pumpkin, cranberries, melted butter, 
spices, and vanilla; blend well.

Pour pumpkin mixture over soaked bread and stir to blend.

Pour mixture into the prepared baking dish. Sprinkle top with cinnamon-sugar, 
if 
desired. Bake for 45 to 60 minutes, or until set.

NOTE:  I didn't have the cranberries called for, so I used raisins instead. 
Tasted great.  Also, I threw in some chopped pecans.

[CnD] brandied fruitcake

This is the only microwave fruitcake I could find.  Unhappily, there are no 
spices called for.  If I do decide to make this, I've got to put in some spices.

BRANDIED FRUITCAKE

1/2 lb. candied chopped fruit
1/4 lb. candied cherries
1/4 c. raisins
3/4 c. coarsely chopped walnuts or pecans
2 tbsp. brandy
1 c. plus 2 tbsp. flour
1/2 tsp. butter, softened
1/2 c. firmly packed brown sugar
3/4 c. egg substitute or 3 eggs
1/2 tsp. baking powder


Place fruit and nuts in medium bowl with brandy; toss together. Let stand 
overnight. Add half the flour to the fruit-nut mixture in a medium bowl. Add 
eggs; beat well. Add remaining flour and baking powder; stir well. Stir in 
fruit 
mixture until well combined.
Line 9x5-inch loaf pan with strip of waxed paper that extends past ends in both 
directions for ease of removing cake from pan. Fill pan with batter. Microwave 
on MEDIUM about 8-9 minutes, then microwave on HIGH 1 minute, rotating once 
until loaf tests done with toothpick (may have slight moist spot on flat 
surface.)

Cover and let stand on flat surface; lift from pan to cool on rack. When 
completely cool, wrap in brandy soaked cheesecloth. Place in plastic bag and 
refrigerate up to 3 months. Serves 12-16.

TIP: Fruitcake can be baked in two disposable microwave mini-loaf pans (6 3/4 x 
3 3/4 x 1 3/4 inch). Bake the 2 small loaves at one time, rearranging pans 
twice 
during cooking. Recipe can be doubled to make 2 (9x5-inch) loaves. Microwave 
one 
at a time.

Okay.  This one is more to my liking.


Ingredients

  Unsifted flour 3?4 Cup (12 tbs)
  Salt 3?4 Teaspoon
  Baking powder 3?4 Teaspoon
  Ground nutmeg 3?4 Teaspoon
  Ground allspice 3?4 Teaspoon
  Diced candied cherries 1 3?4 Cup (28 tbs) (Green Colored)
  Diced candied cherries 1 3?4 Cup (28 tbs) (Red Colored)
  Coarsely chopped walnuts 6 Cup (96 tbs)
  Butter/Margarine 3?4 Cup (12 tbs) (At Room Temperature)
  Firmly packed brown sugar 6 Tablespoon
  Honey 3 Tablespoon
  Eggs 6
  Brandy 6 Tablespoon


Directions

1. Sift flour, salt, baking powder, nutmeg and all spice together. Set aside.
2. In a large bowl combine candied cherries and walnuts and set aside.
3. In another large bowl cream butter until light and fluffy. Gradually beat in 
sugar and honey. Beat in eggs one at a time.
4. Add flour mixture and beat until smooth,
5. Beat in brandy.
6. Fold in nut mixture.
7 Pour batter into a deep straight-sided 1 1/2-quart non-metallic casserole. 
Heat, covered with a piece of greased wax paper, in Microwave Oven 6 to 8 (8 to 
10) minutes or until a cake tester comes out clean when inserted in the center 
of the cake.
8. Let cake stand at room temperature for 20 minutes before turning out of pan.
9. If desired, a glaze may be prepared from confectioners' sugar and water.

there are so many recipes for bread pudding.  Here's one I make for my daughter 
who is crazy for anything with peaches.  I'll post some more recipes, too.

Peach Bread Pudding

Peach Bread Pudding
Ingredients:
•4 cups torn French bread
•1 can (14 ounces) sweetened condensed milk
•3 large eggs
•2 to 2 1/2 cups diced canned peaches, juice reserved
•1/2 cup peach juice
•1 1/4 cup hot water
•4 tablespoons butter, melted
•1 teaspoon vanilla
•1 teaspoon cinnamon
Preparation:
Preheat oven to 325°. Butter an 11x7-inch baking dish.
Tear bread into a bowl.
In a large bowl, combine sweetened condensed milk and eggs; blend well. Add 
diced peaches, peach juice, hot water, melted butter, cinnamon, and vanilla. 
Stir in bread, moistening completely. Turn into prepared baking dish. Bake 1 
hour and 10 minutes or until a knife inserted in center comes out clean.
Cool slightly and serve warm with ice cream, whipped topping, or dessert sauce. 
Cover and refrigerate leftovers.

INGREDIENTS:
List of 13 items
. 8 ounces French bread, torn into small pieces, about 5 cups
. 2 cups half-and-half, or half milk and half cream
. 3 large eggs
. 2/3 cup granulated sugar
. 2/3 cup brown sugar
. 1 can (15 ounces) pumpkin puree
. 1 cup dried cranberries
. 3 tablespoons melted butter
. 1 teaspoon ground cinnamon
. 1/2 teaspoon ground nutmeg
. 1/2 teaspoon ground ginger
. 1 teaspoon vanilla
. cinnamon sugar, optional

PREPARATION:
Butter an 11x7-inch baking dish. Heat oven to 350°.

In a bowl, cover the torn bread with the half-and-half; set aside.

In another bowl, combine eggs, sugars, pumpkin, cranberries, melted butter, 
spices, and vanilla; blend well.

Pour pumpkin mixture over soaked bread and stir to blend.

Pour mixture into the prepared baking dish. Sprinkle top with cinnamon-sugar, 
if 
desired. Bake for 45 to 60 minutes, or until set.

NOTE:  I didn't have the cranberries called for, so I used raisins instead. 
Tasted great.  Also, I threw in some chopped pecans.

Apple Pecan Bread Pudding

Ingredients
.1 cup pecans, coarsely chopped
.3 large eggs
.8 slices raisin bread, diced
.2 cups half  half or milk
.2 medium green apples
.1/4 cup bourbon or brandy
.1 cup sugar
.1/4 cup butter or margarine, melted
.1 teaspoon cinnamon
.1/2 teaspoon nutmeg, for garnish
Instructions
1. Preheat oven to 350 degrees F. Spread pecans in a shallow baking pan and 
bake 
until golden, about 8-10 minutes, stirring occasionally.

2. Meanwhile, place bread cubes in a greased 3 quart or larger slow cooker.

3. Peel, core and thinly slice the apples.

4. Mix lightly together the sugar, cinnamon and nutmeg, add eggs and mix well. 
Blend in half and half or milk and then stir in bourbon or brandy.

5. Lightly mix pecans with bread and apples. Pour egg mixture over bread. 
Drizzle with butter.

6. Cover and cook on low until apples are tender when pierced and custard is 
set; about 3 1/2 to 4 1/2 hours.

7. Let pudding stand, covered, for about 15 minutes. Serve warm with ice cream

This is one I just threw together one day, and I think it's my favorite.  It's 
plain and simple

4 eggs
1/2 cup sugar
cinnamon, nutmeg, cloves to your taste
3 cups milk
6 to 8 slices bread, torn

Directions

In a marge bowl, beat eggs well, then add sugar and spices and mix well.
add milk and the bread, and mix well.  Let stand for a while to let the bread 
absorb the liquid, then pour into a buttered 8/12 baking dish.
Bake at 350 for 30 to 45 minutes, or until set in center.

NOTE:  I also like to add about a cup of raisins, if I have them.  Also, if 
using wheat bread, you can use brown sugar.

2 cups (12-oz. pkg.) NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morsels
1 cup chopped nuts
Directions
PREHEAT oven to 375° F.

COMBINE flour, baking soda and salt in small bowl. Beat butter, granulated 
sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add 
eggs, one at a time, beating well after each addition. Gradually beat in flour 
mixture. Stir in morsels and nuts. Drop by rounded tablespoon onto ungreased 
baking sheets.

BAKE for 9 to 11 minutes or until golden brown. Cool on baking sheets for 2 
minutes; remove to wire racks to cool completely.

PAN COOKIE VARIATION: Preheat oven to 350° F. Grease 15 x 10-inch jelly-roll 
pan. Prepare dough as above. Spread into prepared pan. Bake for 20 to 25 
minutes 
or until golden brown. Cool in pan on wire rack. Makes 4 dozen bars.

Cover and cook on low for 7 hours.
Serve topped with ice cream, whipped cream, dessert topping, or a piece of 
cheese.

Crockpot Cake

1 cake mix, any brand any flavor
1 small box instant pudding; use the same flavor as the cake
12 ounces sour cream
4 eggs
3/4 cups oil
1 cup water

Spray inside of crackpot with nonstick cooking spray. Mix all
ingredients together and pour in crockpot. Cook on low for about 6
hours. Turn crockpot off and let sit for about 1 to 2 hours. Then you
can flip it out onto a plate. If you do not let it cool long enough
before taking it out of the crockpot half of it stays in the crock.

Old-Fashioned Raisin Pie Recipe

2 C. raisins

2 C. water

1/2 C. brown sugar, packed

2 T. cornstarch

1/2 t. cinnamon

1/4 t. salt

1 T. lemon juice

1 T. butter

Pastry for double-crust pie

Combine raisins and water in saucepan; boil 5 minutes.

Blend sugar, cornstarch, cinnamon and salt in a bowl. Add to raisins and cook, 
stirring until clear. Remove from heat. Stir in lemon juice and butter. Cool
slightly.

Preheat oven to 400 degrees. Roll out half of pastry into a circle large enough 
to fit bottom and sides of 9-inch pie pan. Place in pie pan. Turn slightly
cooled raisin filling into pastry-lined pie pan. Roll remaining pastry, and 
cover pie with a solid circle, or lattice strips. Trim and crimp edges.

If using solid top crust, cut slits into it. Bake 25 minutes, or until crust is 
brown and filling is bubbly. Cool pie completely before slicing.

Makes 1 pie.

This was my Dad's favorite pie.

This is what I found on the internet.

Yes, watermelon can be frozen, but it will be mushy when thawed. For this 
reason, it is best used as an ingredient in drinks, sorbets and other prepared 
dishes.

To freeze watermelon: Chop the melon into small cubes (or balls). Remove all 
seeds. Then, flash freeze on a baking sheet, and transfer to freezer bags for 
storage.

. Rinse clean plastic containers and lids with boiling water.
. Place fruit into a large bowl.
. Measure sugar into separate bowl. (Scrape extra sugar off cup to level for 
exact measure).
. Stir sugar into fruit. Set aside for 10 minutes, stirring occasionally.
. Mix water and
fruit
pectin
in small
sauce
pan. (It may be lumpy before cooking.) Bring mixture to boil over high heat,

Blueberry Cobbler

1/2 cup butter
1 cup self rising flour
1 cup sugar
1 cup milk
4 cups fresh blueberries

Directions

Preheat oven to 350
Melt butter in 8x8 square baking dish in the preheating oven.
Mix dry ingredients together well, and add milk.  Pour butter over the butter.

Scatter berries over the batter.
bake for about an hour or until toothpick comes out clean.

Note:  To make your own self rising flour:  For each cup of flour, add 1 1/4 
tst 
baking powder and 1/4 tst salt.

French Onion Potato Salad

2 1/2 cups potatoes, cubed and cooked
2 tablespoons cider vinegar
1 cup celery, diced
1 cup French onion dip
1 teaspoon granulated sugar
2 teaspoons salt
1 small onion, chopped
2 to 3 eggs, hard boiled

Sprinkle warm potatoes with salt, sugar and vinegar. Toss lightly.
Add onion, celery and eggs (mashed or sliced, your preference).
Carefully blend in onion dip. Chill several hours or overnight for
flavors to blend.

I have used it, though not for a long time.  It must be kept refrigerated

using.  I think I just squished it up with a spoon and added the amount of 
water 
called for and stirred it well.  I think active dry yeast is much easier to

Ingredients
a.. 1 lb medium pasta shells
b.. 1 (8 ounce) containers sour cream
c.. 1 lb colby cheese (cubed) or 1 lb cheddar cheese ( cubed)
d.. 1 (10 3/4 ounce) cans Campbell's cheddar cheese soup
e.. salt and pepper
Directions
1.. Preheat oven to 350 degrees.
2.. Prepare Pasta shells according to package directions and cook to al dente.
3.. While Pasta is cooking, combine other ingredients in a large bowl, and stir 
well enough to combine all ingredients thoroughly.
4.. Drain Cooked Pasta, and add to cheese mixture and thoroughly combine.
5.. Transfer to a large casserole dish, and bake at 350 degrees for 
approximately 30 minutes, or until cheese is completely melted and hot and 
bubbly.
6.. Let stand for 10 minutes before serving.

Add beef broth, bring to a boil.
Stir in enough of the butter/flour roux to make a thick gravy to bind the 
filling.
Pour into large shallow baking pan and
cool.
The filling should be about 1 1/2 inches deep.
Cover the meat mixture in the pan with the corn and then top with the hot 
mashed 
potatoes. smooth potatoes evenly, brush surface with butter.
Bake at 325 F for 35-40 minutes.

Yes;I agree with Alice.  I tried foil, and burned my fingers trying to take it 
off.  also, I like to add a few drops of water to the skillet.  It steams the 
eggs and helps to alleviate the crispy edges that sometimes occur when frying 
eggs.

Chile Relleno Casserole
Love Chiles Rellenos but are short on time? This casserole has all of the taste 
with very little of the work! It is delicious with a salad as a hearty dinner, 
or as brunch, with plenty of juice and fresh tortillas.

1 1/2 cups (6 ounces) SARGENTO® Fancy Shredded Monterey Jack or ChefStyle 
Shredded Mild Cheddar Cheese, divided
1/2 cup (4-ounce can) ORTEGA® Diced Green Chiles
2 tablespoons all-purpose flour
1 1/2 cups milk
3 eggs, lightly beaten
ORTEGA® Thick  Chunky Salsa
Toppings: sour cream, sliced ripe olives, chopped green onions


PREHEAT oven to 325°F.

SPRINKLE 3/4 cup cheese onto bottom of lightly greased 8-inch square baking 
dish. Top with chiles and remaining cheese. Place flour in medium bowl. 
Gradually add milk, stirring until smooth. Stir in eggs; pour mixture over 
cheese.

BAKE for 45 to 50 minutes or until knife inserted in center comes out clean. 
Cool in pan for 10 minutes.

SERVE with salsa and desired toppings.

I googled mashed potato fudge, and I found a ton of recipes.  This one sounds 
really good.

Ingredients:

1/2 cup unseasoned, well-mashed cooked potatoes (about 1 medium potato)*
3 cups powdered (confectioners) sugar
1 cup flaked or shredded coconut
1 teaspoon pure vanilla extract
3 ounces semi-sweet chocolate
3 tablespoons butter

* You can also bake a medium-size potato and mash it while still hot. The 
mashed 
potatoes should equal 1/4 cup. Learn how to make Perfect Mashed Potatoes. You 
can also use instant mashed potatoes to make this candy.


Preparation:

Bake or microwave the potato until a fork pierces it easily.

While the mashed potatoes are still hot, beat in the powdered sugar and 
coconut; 
then add the vanilla extract.

Press into a lightly greased 8-inch square pan; set aside.

In a saucepan over low heat, melt chocolate and butter, stirring occasionally. 
When melted, pour over top of the potato mixture.

Refrigerate until set and then cut into squares.

Store in an airtight container in the refrigerator.

Makes 64 1-inch pieces.

10 oz. marshmallows
12 oz. semisweet chocolate chips
Coconut, toasted
Decorative candies

Arrange marshmallows on cookie sheet or jelly roll pan; freeze 15 minutes.

Microwave chocolate chips on high for 2-1/2 minutes or until smooth,
stirring every minute.

Using skewer or fondue fork, dip each frozen marshmallow into melted
chocolate until marshmallow is completely coated.

Roll in coconut or decorative candies.

Use another fork or metal spatula to place marshmallow on waxed paper lined
cookie sheet or jelly roll pan.

1 cup confectioners' sugar
3 1/2 envelopes (2 tbls. plus 2 1/2 teas.) unflavored gelatin
1/2 cup cold water

2 cups granulated sugar
1/2 cup light corn syrup
1/2 cup hot water (about 115F.)
1/4 teaspoon salt

2 large egg whites
1 teaspoon vanilla


Oil bottom and sides of a 13- by 9- by 2-inch rectangular metal
baking pan and dust bottom and sides with some confectioners' sugar.
In bowl of a standing electric mixer or in a large bowl sprinkle
gelatin over cold water and let stand to soften.
In a 3-quart heavy saucepan cook granulated sugar, corn syrup,
hot water, and salt over low heat, stirring with a wooden spoon,
until sugar is dissolved. Increase heat to moderate and boil mixture,
without stirring, until a candy or digital thermometer registers 240F,
about 12 minutes. Remove pan from heat and pour sugar mixture over
gelatin mixture, stirring until gelatin is dissolved.
With standing or a hand-held electric mixer beat mixture on high speed
until white, thick, and nearly tripled in volume, about 6 minutes if
using standing mixer or about 10 minutes if using hand-held mixer. In
a large bowl with cleaned beaters beat whites (or reconstituted powdered
whites) until they just hold stiff peaks. Beat whites and vanilla into
sugar mixture until just combined. Pour mixture into baking pan and
sift 1/4 cup confectioners sugar evenly over top. Chill marshmallow,
uncovered, until firm, at least 3 hours, and up to 1 day.
Run a thin knife around edges of pan and invert pan onto a large cutting
board. Lifting up 1 corner of inverted pan, with fingers loosen
marshmallow and let drop onto cutting board. With a large knife trim
edges of marshmallow and cut marshmallow into roughly 1-inch cubes.
Sift remaining confectioners' sugar into a large bowl and add
marshmallows in batches, tossing to evenly coat. Marshmallows
keep in an airtight container at cool room temperature 1 week.

Cranberry Sauce Bundt Cake

Ingredients:
List of 11 items
. 3 large eggs
. 1/2 cup vegetable oil
. 1 can (16 ounces) whole berry cranberry sauce
. 1/4 cup granulated sugar
. 1/3 cup orange juice concentrate, thawed, or use plain orange juice along 
with 
zest of 1 orange, if desired
. 1 vanilla cake mix with pudding in the mix (18.25 ounces)
. 1 cup chopped pecans, walnuts, or almonds
. ---
. Optional Glaze:
. 1 cup confectioners' sugar
. 2 to 3 tablespoons frozen orange juice concentrate, thawed, or fresh orange 
juice

Preparation:
Grease and flour a 12 cup Bundt cake pan. Heat oven to 325° . If you use a 
light-colored baking pan, heat oven to 350°.

Beat together the eggs, oil, cranberry sauce, sugar, and orange juice. Slowly 
beat in the cake mix until blended and continue beating on high speed for
about 2 minutes. Fold in nuts and spoon into the prepared pan. Bake for 50 to 
55 
minutes, or until a toothpick or cake tester comes out clean when inserted
in center.
Drizzle with Orange Glaze or dust with powdered sugar.
For glaze, combine 1 cup confectioners' sugar with 2 to 3 tablespoons of thawed 
orange juice concentrate, or enough juice to create a thin icing consistency.

Pumpkin chiffon pie

Ingredients
1 (9-inch) frozen deep-dish pie crust
32 jumbo marshmallows
1 cup pumpkin puree
1/2 teaspoon pumpkin pie spice
1/4 teaspoon salt
12-ounce container whipped topping
Cinnamon, garnish

Directions

Bake the pie crust according to the package directions and allow it to cool.

In the top of a double boiler over low heat, combine the marshmallows and the 
pumpkin puree. , Stir constantly, with a heatproof spatula, until the 
marshmallows are melted. Take the pan off the heat and stir in the spice and 
salt.

When the mixture is completely cool, stir in half of the whipped topping. Pour 
the filling into the prepared pie crust. Top with the remaining whipped topping 
and garnish with cinnamon.

Dark Fudgey Pecan Pie

Ingredients:
.1 unbaked 9-inch pie crust
.1-1/2 cups coarsely chopped pecans
.1/2 cup (1 stick) butter or margarine
.1 cup light corn syrup
.1 cup sugar
.1/2 cup HERSHEY'S SPECIAL DARK Cocoa
.4 eggs
.1 teaspoon vanilla extract
Directions:
1. Heat oven to 325°F. Fit pie crust into 9-inch pie plate according to package 
directions; fold edges under and crimp. Spread pecans evenly on bottom of 
pastry 
shell.

2. Combine butter, corn syrup, sugar and cocoa in medium saucepan; cook over 
low 
heat, stirring constantly, until sugar dissolves. Cool slightly. Stir in eggs 
and vanilla until blended. Pour into crust.

3. Bake 1 hour and 10 minutes or until set. Cool. Serve with whipped cream, if 
desired. 8 servings.

Chocolate Bread Pudding
Ingredients
1 (1-pound) loaf French or Italian bread, cubed
3 cups milk
1/4 cup heavy cream
1/2 cup coffee flavored liqueur
1 cup sugar
1 cup packed light brown sugar
1/4 cup cocoa powder
1 tablespoon vanilla extract
2 teaspoons almond extract
1 1/2 teaspoon cinnamon
6 eggs, lightly beaten
8 ounces semisweet chocolate, grated
Whipped cream (optional)

Directions


Preheat oven to 325 degrees F.



Lightly grease a 13 by 9-inch baking dish and place the bread in the dish. In a 
large bowl, whisk together the milk, cream, and liqueur. Using another bowl, 
combine the sugar, brown sugar, and cocoa powder and mix well. Add the sugar 
mixture to the milk mixture and mix well. Add the vanilla and almond extract, 
and cinnamon to the beaten eggs. Combine the egg mixture to the milk mixture 
and 
mix well.

Stir the grated chocolate into the mixture. Pour the mixture over the cubed 
bread in the pan. Let the mixture stand, stirring occasionally for 
approximately 
20 minutes or until bread absorbs most of the milk mixture. Bake pudding for 1 
hour or until set. Check pudding by inserting a knife through the middle and it 
should come out clean.


Serve the pudding warm, or refrigerate and serve chilled with whipped cream if 
desired

[CnD] fresh cranberry orange relish

Fresh Cranberry Orange Relish

1 12 oz pkg fresh cranberries
1 orange


Put washed, drained cranberries in a food processor with 1 orange which has 
been 
peeled and quartered with all seeds being removed.
Pulse for a few seconds, just until coarsely chopped. Stop and scrape down 
sides 
of bowl, if necessary, to chop evenly.

Add 3/4 to 1 cup of sugar and taste adjusting sweetness as desired.

Stir well and refrigerate for at least 2 hours before serving.

Cranberry Orange Relish may be frozen for up to 2 months.

Makes about 2 1/2 cups.
